The Cook's Nook

This week’s Nook "has to do’ r with
peaches, tomatoes and cucumbers. All
are in season and equally delicious.
First we have a Peach Cobbler for
your peach dish I’m looking forward
to a bowl of fresh peaches and cream.
There is a Tomato Chutney for a
delicious condiment, a Cucumber Ring
Pickel for pickle lovers, and Plum
Chutney for that something “yummy.”
Now is the time to preserve and
can these seasonal fruits and vegetab
les.
PEACH COBBLER
Arrange 3 cups sliced fresh peach
es in grease BVi or 9 inch round bak
ink dish Mix 1 cup sugar, 1 teaspoon
grated lemon peei, 1 tablespoon lemon
juice and sprinkle over peaches. Dot
with bits of butter, (about 2 table
spoons.) Place in hot oven. 400 degrees
F and prepare the topping. Sift to
gether IVi cups sifted flour, 1 table
spoon sugar, 3 teaspoons baking pow
der, and Vi teaspoon salt. Cut in 1 3
cup shortening. Beat 1 egg and com
bine it with l /2 cup milk. Add this li
quid all at once to the flour mixture,
then stir just until the flour is moist
ened
Now remove peaches from oven
Sprinkle with a bit of cinnamon or
nutmeg if desired. Now spoon dough
over the hot peaches, Speading it
slightly with back of spoon. Sprinkle
with 2 tablespoons sugar. Bake in hot
oven, 400 degrees F. 30 minutes or
until top is golden brown. Serve warm
with cream, if you like. Serves 6.
TOMATO CHUTNEY
3 pounds ripe tomatoes
3 medium apples (tart green)
2 cloves garlic
1 cup seedless raisins
2 cups white vinegar
2 ginger roots (dried) Note; You
can buy ginger root in most drug
stores
3 cups brown sugar
1 tablespoon salt
V* teaspoon ground cloves
V* teaspoon cayenne

all other ingredients. Bring to a boil,
then turn down heat and cook slowly
for about IV6 hours or until the mix
ture is as thick as apple butter. Stir
frequently. Lift out ginger root and
ladle chutney into 2 sterilized pint
jars. Seal and store in cool place.
CUCUMBER RINGS
8 cucumbers
Vs cup salt
4 medium onions
1 green pepper
1 sweet red pepper
IV2 pint white vinegar
3 cups sugar
1 tablespoon mustard seed
1 teaspoon celery seed
1 teaspoon tumeric
Slice unpeeled cucumbers about
1 8 inch thick, put in a large bowl and
sprinkle with salt. Let stand about 4
hours, (better yet, overnight), then
drain well. Now slice onions, chop
both green and red peppers and mix
with remaining ingredients. Add to cu
cumber slices and bring to boil, but
don’t boil. Pour into 8 sterilized pint
jars and seal securely.
PLUM CHUTNEY
2 pounds plums
3 tart apples
IV2 cups seedless raisins
2 onions
3 cups vinegar
I'/a cups sugar
1 tablespoon salt
4 teaspoon cloves
2/3 teaspoon cinnamon
2/3 teaspoon allspice
2/3 teaspoon ginger
Cut plums into quarters, remove
seeds. Feel, core and chop apples- Now'
mix the fruits with raisins and chop
ped onions. Put vinegar, sugar and re
maining ingredients in a kettle and
bring to a boil. Add fruit mixture and
cook very, very gently for about 30
minutes or until chutney is as thick
as apple butter. Pour into 3 sterilized
pint jars and seal tightly.
