PThe Cook’s Nook

Sunday is Mother’s Day, and The
Cook’s Nook greets all mothers with
wishes for a “Happy Mother’s Day.”
Our column is so pleased to have a
“traveling” mother with us for the
day. She is our own Marie (Mrs. Bill)
Marshall who resides on Evergreen
Street. Marie and husband Bill go a’
traveling many weeks of the year,
and Marie was most gracious to
remember us in her travels. She
brought three delightful recipes to
share with us, I thought that these
would make a lovely Mother’s Day
column.
The Orange Soda Bread and Orange
Jelly recipes come from the
Bradenton Herald Sunday Magazine.
Marie picked these up when they
were on a three month’s jaunt in
Florida. The Chafing Dish
Mushrooms came from Wheaton,
Maryland (near Washington); this
one is especially for mushroom
lovers. Marie and Bill spent several
days during Easter with their son
Tom and his wife, Martha. This is
where they found this grand
mushroom dish, you may use your
chafing or fondue dish for this one.
(Marie says that mushrooms are
plentiful here, and this dish was
served to the “Red Skins" there).
I’m sure many mothers will enjoy
Marie’s recipes along with those of us
who are not mothers.
The North West is the next stop for
the Marshalls, Marie says it’s in the
“talking” stage now. Have fun!
ORANGE SODA BREAD
4 cups sifted all-purpose flour
1 teaspoon salt
1 teaspoon sugar
1 teaspoon baking soda
I cup buttermilk
Va cup Florida orange juice
1 egg
1 cup raisins
1 tablespoon grated orange rind.
Sift flour, salt, sugar and baking
soda into bowl. Make a hollow in the

center and pour in buttermilk and
orange juice. Mix well. Add egg,
raisins and orange rind; beat until
smooth (dough will be sticky). Knead
lightly on a well floured board. Shape
into a round loaf and cut an X across
the top. Place in a well greased 9-inch
round layer cake pan. Bake in 350-
degree oven for 40 minutes or until
cake tester inserted in center comes
clean. Serve warm or cool with
Orange Jelly.
ORANGE JELLY
IVi cups sugar
1 cup water
Vi bottle liquid fruit pectin
1 can (6 ounces) frozen Florida
Orange juice concentrate, thawed,
undiluted
3 tablespoons lime juice
Put sugar and water into large
saucepan; mix well. Place over high
heat and bring to a full rolling boil;
boil 1 minute, stirring constantly.
Remove from heat. Immediately stir
in liquid pectin. Add undiluted orange
concentrate and lime juice; mix well.
Skim off foam with metal spoon Ladle
into sterilized glasses and seal with
hot parrafin. Makes 4 cups.
CHAFING DISH MUSHROOMS
3 pounds fresh mushrooms
'/a cup sherry
Va pound butter
1 bay leaf
1 teaspoon oregano
1 teaspoon tarragon
1 teaspoon dill seed
2 cloves garlic, minced
Va pint sour cream
Wash mushrooms and put into large
pot. Add all ingredients except sour
cream. After mixture has cooked at
medium heat for 30 minutes and most
of the liquid has been reduced, fold in
sour cream. Serve in chafing dish.
(You may also use your fondue pot to
serve this in).

Tim Lewis and Bobby Lee

awarded scholarships to the
11th Annual Natural
Resources Conservation
Workshop to be held at
Abraham Baldwin
Agricultural College in
Tifton the week of June 4-9.

National Bank of Houston
County in Perry and by The
Bank of Perry, in
cooperation with the Oc
mulgee Soil and Water
Conservation District,” says

Perry is the local supervisor
of the District.
The week-long workshop is
sponsored jointly by the
Georgia Chapter, Soil
Conservation Society of
America and the Georgia
Association of Conservation
District Supervisors.
Students will be taught the
basics of conserving natural
resources. Four major areas
of study are soil and water
conservation, wildlife and
recreation, forestry, and
agricultural research.

graduated from this
Workshop since it was first
held in 1962. In addition to
stimulating interest among
young people in the con
servation of natural
resources, it is hoped some
students will be encouraged
to become professional
conservationists.
