PThe Cook’s Nook

This week I’m writing about
something “dear to my heart,” The
Sorosis Club of Perry of which I am a
member.
Some years ago in 1957 to be exact,
we decided to write and publish a
cook book as a money making
project. Lucile (Mrs. A. C. ) Pritchett
was our Finance Chairman at that
time and she came up with the idea of
a cook book which has proven to be a
successful venture -- and a fun one.
It’s title is “COOKING AT THE
CROSSROADS”, a title that we
thought appropriate as we are truly
the Crossroads of Georgia. Our book
cover depicts a map of Georgia with a
crossroad sign which makes this book
a perfect souvenir of our town.
The recipes therein are from
Sorosis members. To quote from our
foreword in book: “We have tried to
preserve the best of the old and
present the best of the newer
recipes”. Our Financial Chairman for
this year is Fanita Beckham.
Last week we met at the home of
Mrs. Pritchett to make plans for the
coming year. She served us a most
delicious lunch “buffet sytle”, and we
delightedly nibbled on little ham
biscuits along with other tasty dishes
guaranteed not to “whittle
waistlines.” But who cares about
waistlines at a time like this!
I thought that “COOKING AT THE
CROSSROADS” would be a lovely
guest for our Cook’s Nook. I’m sure
that you will be pleased to note that I
am including several recipes from
our club book.
The Hot Ham Squares is a recipe
from Lucille Pritchett (Club
President), the Date Pie is from Ruby
Middlebrooks (Vice President), the
Cranberry Tip Top Salad is a favorite
of Coralie Nunn (Secretary), and
Nina Harper (treasurer) shares her
recipes for Tamalie Pie.
HOT HAM SQUARES
2 cups ham (cooked and ground)
1 tablespoon prepared mustard
1 tablespoon mayonnaise
7 tablespoons melted butter
Mix thoroughly. Roll out very short
biscuit dough Vs inch thick. Spread
ham mixture and cover with another

layer of biscuit dough. Cut in squares
with knife. Prick edges with fork.
Bake in hot oven and serve.
DATE PIE
2 tablespoons flour
1 cup sugar
1 teaspoon vanilla
1 cup nuts
2 eggs
1 teaspoon baking powder
Pinch salt
1 cup dates
Mix sugar, salt, flour and baking
powder and sift. Beat eggs and stir in
dry mixture. Add nuts and dates.
Bake in greased pan.
CRANBERRY TIP-TOPS
1 (1 pound) can Cranberry Sauce
3 tablespoons lemon juice
1 cup heavy cream, whipped
1 (3-ounce) package cream cheese,
whipped
Vi cup mayonnaise
Va cup sifted confectioner’s sugar 1
1 cup chopped nuts
Crush cranberry sauce with fork.
Add lemon juice. Pour into paper
cups or refrigerator tray. Combine
remaining ingredients and spread
over cranberry mixture. Freeze firm.
Unmold on crisp lettuce. Makes 6 to 8
servings.
TAMALIE PIE
1 pound ground beef
1 can corn
1 can tomatoes
1 cup corn meal
1 teaspoon chili powder
salt
pepper
Heat beef in frying pan with small
amount of shortening. Add salt,
pepper and chili powder, then corn
and tomatoes. Cook for a few
minutes.
Line greased baking dish with a
crust made of corn meal, salt and
water. Add hot mixture. Top with thin
corn meal patties.
Bake until crust is brown.

The Reverend Tonkel is a
native of Louisiana, a pastor,
writer, teacher, and radio
program director. Reverend
Tonkel is well known
throughout Mississippi and
Louisiana for his unique
abilities in wide and varied
fields of church work. The 36
year old Reverend Tonkel is
a favorite with the youth age
group where ever he serves.
The Reverend Wallace D.
Chappell is a noted
evangelist, preacher and
writer. A native of Asheville,
North Carolina. The 43 year
old Reverend Chappell has
traveled extensively
preaching at national
religious assemblies and
studying to further qualify
him as an outstanding
minister.
The Reverend David
Haygood, a native of Dodge
County, Georgia, has made
outstanding achievements

with his ability to lead people
to greater religious ex
periences through his
preaching and singing
ability. Reverend Haygood,
now the pastor of the Mt.
Vernon-Ailey United
Methodist Churches, was
active with the Candler

from Candler School of
Theology, Atlanta. Ga.,
during his college years.

District Superintendent of
the Americus District of The
United Methodist Church, we
are fortunate to have such an
outstanding team to lead us
in the services at Dooly
