Each week seems to bring more
requests for summer recipes. Today I
have one for some ground beef dishes
and also one for a butternut squash
recipe. We shall have Sweet and Sour
Meatballs and a Butternut Squash
Souffle. For those “sweet-tooths” our
sweet is a Date-Nut Cookie that is
grand to nibble on and so good for a
picnic treat.
And on into the good ole sum
mertime! I hope you will enjoy our
Nook and if any of you have a favorite
recipe to share with us, we’d like it
very much.
SWEET AND SOUR MEATBALLS
1 cub cubed bread crumbs
1 cup milk
1/3 cup finely chopped onion
IVz pounds ground beef
Vt pound pork (optional)
1 <?gg
1 teaspoon salt
V 4 teaspoon pepper
2 (12-ounce) bottles chili sauce
Vi cup water
1 (10-ounce) jar grape jelly
1 cup sour cream
Cooked noodles or rice
Combine breadcrumbs, milk,
onion, meat, egg, salt, and pepper.
Shape into ball the size of walnuts.
Drop into sauce made by combining
chili sauce, water and jelly. Simmer
gently for 1 hour. Just before serving
stir in sour cream. Serve over hot
cooked noodles or rice.

pound butternut squash just as for
baked sweet potato. Bake about 1 to
IVi hours (until tender). Peel squash
or scoop out the pulp and mash well.
To 1 cup of squash add:
1 tablespoon butter
1 teaspoon brown sugar
V* teaspoon salt
'/s teaspoon ground ginger
Beat this mix well and add a little
warm milk or cream, or orange juice
to make it a good consistency. Place
in baking dish or casserole, add
raisins or nutmeats and V* cup
crushed pineapple if desired. Heat
and serve.
DATE-NUT COOKIES
2 teaspoons soda
2 cups chopped dates
Vi cup boiling water
1 cup butter or margarine
Wi cups sugar
2 eggs, beaten
1 cup coconut or raisins
1 cup chopped nuts
1 teaspoon vanilla
3V4 cups flour
Sprinkle soda over chopped dates.
Add boiling water, stir well, and set
aside. Cream butter and sugar; add
eggs and beat well. Stir in dates,
coconut, nuts and vanilla and mix
well. Add flour and mix well, batter
will be very stiff.
Drop by teaspoons onto greased
cookie sheets and bake at 375 degrees
about 12 minutes, or until browned.
Makes about 7 dozen.
