"A picklin' we shall go!"
I have had call after call asking for
pickle recipes, so I decided to "do" a
column on pickles.
A friend was in the shop a few days ago
and asked me about Brandied Peaches.
These are delicious and a gourmet touch
when served at a special luncheon or
dinner.
Next I have a Seven Day Onion Pickle
which I think many of you will like.
Another friend asked about onion
pickles, and I hope this is the answer.
The Red Cabbage Relish is a goodie for
that cabbage -this is easy and grand to go
along with summer vegetables.
BRANDIED PEACHES
3 cups sugar
3 A cup brandy
2 quarts peeled fresh peach halves
Sterilize 4 pint jars; leave in hot water
until ready to fill. Combine sugar and 1
cup water in large saucepan. Over
medium heat, bring to boiling point,
stirring until sugar is dissolved. Now,
reduce heat and simmer 10 minutes. Add
peach halves; simmer gently 10 minutes,
or just until peaches are tender. Remove
saucepan from heat. Meanwhile, put 1
tablespoon brandy in each hot, sterilized
jar. Half fill jar with peaches, then add 1
tablespoon brandy to each jar. Fill with
remaining peaches; top each with 1
tablespoon brandy, and cover with syrup.
Cap at once as jar manufacturer directs.
Makes about 4 pints.
