Easter time is here and we have
ideas for your Easter tables. One
thinks of Easter and Easter Eggs
... little ones will be hunting Easter
Eggs on church grounds, at home
and at parties. Mothers will be
busy with Easter baskets and some
will dye eggs in the old fashioned
way. Candy eggs will be
everywhere and the lucky one to
find the golden egg or the prize egg
will be a happy child.
Easter is a happy time, and a
Holy time. Let us pause to
remember this. For our Nook I
choose a Broccoli Egg Divan and a
salad made with asparagus,
avocado and artichokes. For
dessert a favorite of mine, a
Grasshopper pie. My friend, Laura
May Watson made several of these
for a luncheon we had a long time
ago and I remember that she made
them ahead and we froze them.
BROCCOLI EGG DIVAN
2 packages frozen broccoli
Vi teaspoon pepper
1/3 cup milk
V 4 cup dry bread crumbs
4 hard-cooked eggs
Vi teaspoon salt
1 can condensed
Cheddar cheese soup
2 tablespoons melted margarine
Arrange broccoli in pyrex or
other oven dish. Slice eggs and put
in layer over broccoli. Sprinkle
with salt and pepper. Mix undiluted
soup and milk until smooth. Pour
over broccoli and eggs. Combine
bread crumbs and melted butter
and sprinkle over dish. Bake in 350
degree oven for about 20 minutes or
until cheese sauce bubbles and
bread crumbs are slightly
browned.
