We have a special recipe today, this one comes
from Emmy (Mrs. Tom) Johnson. It has been
requested by so many people that Emmy
decided the Nook would be a great way to share
it. The recipe is from her mother, Mrs. W.A.
Carlton, who was given the recipe by a friend in
Covington about 25 years ago. Emmie says she
has passed it on in every place they have lived,
and now we are fortunate to have it. Emmy’s
Caramel cookies. The Hot Baked Chicken Salad
is one of my favorites, and someone asked to
repeat it once again. The Canadian Butter Tarts
are the best ever, easy to do and so good. They
are a favorite with the men and will be a grand
addition to your holiday and buffet table.
EMMY’S CARAMEL COOKIES
1 cup dark brown sugar
1 stick margarine
1 cup plain flour
1 teaspoon baking powder
1 egg
1 teaspoon vanilla
2 tablespoons white Karo (optional, for a chewy
cookie)
1 cup chopped pecans
Powdered sugar
Melt together over low heat brown sugar and
margarine. Mix well and cool. Add egg and mix
well. Sift together dry ingredients and blend with
sugar mixture. Add vanilla, and if you like
a chewy cookie add white Karo. Mix in pecans
and bake in a greased oblong aluminum pan at
325 degrees for 25 minutes or until firm in center.
Allow to cool completely. Sprinkle top with
powdered sugar and cut into squares. (Emmie
says she added the white Karo because she loves
chewy cookies, but this was not in the original
recipe.)
BAKED CHICKEN SALAD
2 cups cubed chicken or turkey
2 cups celery, chopped
Vi cup toasted almonds, chopped
Vi teaspoon salt
1 or 2 tablespoons grated onion
Vi cup mayonnaise
2 tablespoons pimento, chopped
2 tablespoons lemon juice
Vi can cream of chicken or celery soup
Vi cup sharp Cheddar cheese, grated
1 cup potato chips, crushed
Combine all ingredients except cheese and
potato chips. Toss lightly and spoon into a IVfc
quart casserole. Spread cheese and chips on top.
Bake at 350 degrees for 20 to 25 minutes or until
heated through and lightly browned. Serves 8 to
10. (Sometimes I put half the cheese in my
casserole and the remainder on top.)
CANADIAN BUTTER TARTS
Pastry for 2 crust pie
2 eggs
1 cup seedless raisins
1 cup brown sugar
V* cup melted butter
1 teaspoon vanilla
1 cup chopped nuts
3 teaspoons cream
Preheat oven to 300 degrees. Divide pastry in
half, cut each half in 5 or 6 parts. Roll in 5-inch
circles. Place in ungreased muffin pans. Beat
eggs. Add remaining ingredients and mix well.
Put 1 tablespoon in each unbaked pastry shell
and bake. (Don’t worry about the small amount
placed in shell, the mixture “swells” upon
cooking.) Makes approximately 12 to 16 tarts. If
desired, serve with a dash of whipped cream on
top.

Children’s Book Week was observed recently
at Southside School. Winner in the door
decorations contest was Mrs. Marsh’s fourth
grade class for grades 3-6. The winner in K-2
grades was Mrs. Walker’s class. Pictured (l-r)

Scout Pack 216 Inducts New Cubs
The evening of Nov. 12
saw few empty chairs as
Pack 216 held its first
pack meeting since this
fall’s Cub Round-up. The
Pack added 26 new Cubs
and 8 adult leaders at that
time.
The meeting opened
with the Webelos con
ducting the flag
ceremony. A special
ceremony followed as
Jaycee president Greer
Lassiter presented
committee chairman
John Lamberth with a
new American flag set for
the Pack’s use. Mr.
Lassiter also announced
the Jaycee’s hopes to aid
the Pack in building a
Pinewood Derby track
with funds donated from
turkey shoots that the
Jaycees have planned
this fall. Pack 216 extends
its thanks to the New
Perry Jaycees for their
contributions to the pack
and to the community
this year.
The award ceremonies

Marjorie Saber’s first grade students at
Tucker Elementary School made a pine cone
turkey for their Thanksgiving bulletin board. His
body i« a circle of pine cones glued on poster
paper, one for each student. A construction
paper tail feather for every class member has a
short phrase indicating what he or she is most
thankful for. These included: my bicycle,
turkey, clothes to wear, friends, trees and birds,
a warm house, brothers and sisters, good food to
eat, Thanksgiving and Christmas. Seated below
the finished turkey are: left to right, Darrell
Passinault, Spencer Redmon, Jennifer Forbes,
Cindy Griffin, and Allison Gibbs,standing.
