Billings enjoys cooking
at home and at work

When looking for Barbara
Billings, there’s no need to look
any further than the kitchen.
After all, that’s where she is at
least 12 hours out of typical 24-
hour day.
“The kitchen is my second
home,” Barbara, this week’s Hous
ton Home Journal Cook of the
Week said Monday from the kitchen
at Autumn Terrace where she
works. “I usually spend eight hours
in the kitchen here and then about
four at home. Fortunately, I have
always loved to cook, so I really
don’t mind at all.”
According to Barbara, a Perry na
tive, she has been cooking since
she was just a youngster of nine or
so. She credits her mother, Mae
Frances Keen, also of Perry, with
teaching her just about everything
she knows and admits that her fa
vorite foods to both cook and eat
are by far vegetables such as peas,
butter beans, okra, and greens.
As for her cooking style, she
says that, although she likes to try
new recipes from time to time, she
generally sticks to the traditional
southern recipes that have been in
her family for generations. Most
everything she cooks, in fact, is not
even written in recipe form, but is
simply stored in her memory.
“Even when my husband was in
the Army and we were stationed in
places like Germany, I still cooked
our traditional meals,” she said, not
even breaking stride with her lunch
preparations for the ladies at Au
tumn Terrace. “I don’t just like to
eat; I love to eat. And, my foods
have always had to be cooked just
right.”
A 1979 graduate of Perry High
School, Barbara and her husband,
Jeffery Billings, have one daughter,
14-year-old Conswalla, a freshman
at Perry High School. Jeffery, who
served about 12 years in the United
States Army, has worked for the
Kell wood Company in Perry for the
past five years.
Prior to starting with Autumn
Terrace eight months ago, Barbara
served nearly seven years as the
head breakfast cook at the McDon
ald’s in Perry. All except for the

Jade DeNesha LaSha' Collier was

to Kimberly Shemica Felder and
Maurice Collier, both of Perry.
The maternal grandparents are
Evelyn and Earnest Peavy of Perry.
The paternal grandparents are Lois
and Matthew Collier of Perry.
Smith Sexton
Smith Sexton was bom on Friday,
Feb. 4, 1994. The proud parents
are Thelma and Colton Sexton of
Perry. The maternal grandparents
are Mr. and Mrs. Anthony Regetz
of Madeira Beach, Fla. The
paternal grandparents are Mr. and
Mrs. W. J. Sexton of Perry.

Wednesday, Feb. 9, 1994. The
proud parents are Diana and

When not working or spending
time with her family at home, Bar
bara says she enjoys singing in
both the junior and senior choirs at
her church—Marthann Baptist in
Perry.
Hamburger Pie
Brown:
2 pounds ground beef
1 onion, chopped
1 bell pepper, chopped
Add:
1 (16 ounce) can of whole kernel
can
1 (16 ounce) can of cut green
beans
1 (16 ounce) can tomatoes
1 can tomato sauce
Pimentos (optional)
To above mixture, add one eight
ounce box of macaroni or mashed
potatoes; any brand as long as it
has been cooked per directions. If
using macaroni, make sure to drain.
Once added to meat mixture, sim
mer for approximately 10 minutes.
Remove from heat and put half
of mixture in buttered casserole dish
and top with grated cheddar cheese.
Add rest of meat mixture and top
with cheese again. Cover with alu
minum foil and bake at 350 degrees
for 20 to 25 minutes.
Sausage Quiche
1 pound sausage
4 large eggs
2/3 cup milk
1 teaspoon dry mustard
Dash of salt
2 cups grated cheese (Swiss and
cheddar)
8 ounces sour cream
2 pie shells
Cook and crumble one pound of
sausage. Drain. Line pie shells with
sausage. Beat four large eggs and
add milk, dry mustard, salt, grated
cheese and sour cream. Mix and
pour over sausage. Freeze, if not
going to eat soon.
Bake at 350 degrees for one
hour. Do not thaw before cooking.

Local tourism committee
makes plans for new year
The Tourism Committee of the
Perry Area Chamber of Commerce
for 1994 held its First meeting on
Tuesday, Feb. 1 at the Welcome
Center. Connett Gayle, chairman,
presided. John Sundquist, chairman
of the board and Peggie Williams,
president of the chamber, were
present.
The Tourism Committee
members are Patty Coone, Carolyn
Ann Hagan, Doris Hulbert, suzy L.
Lane, Bob Largent, Gene Lassetter,
Louise Lawson, Kim Murphy,
Karen McClain, Fay Tripp and
Elizabeth Flowers, a chamber
director who will be our advisor.
Sundquist welcomed the
committee members and thanked
everyone for agreeing to give of
their time to promote tourism in
the Perry area. Williams presented
the 1994 Goals and Objectives for
the tourism committee. The goals
are as follows:
Purpose: To promote tourism
in the Perry area.
1. Jointly promote conference
center with Agricenter.
2. Maintain presence at Georgia

Add:

1 can whole kernel com, includ
ing juice
i can cream of chicken soup
Pimento, if desired

To above mixtures, add one
package of drained noodles, cooked
by package directions, but without
salt. Simmer for about 10 minutes.

grated American or Mozzarella
cheese.
Add rest of meat mixture and top
with cheese again.
Cover with aluminum foil and
bake at 350 degrees for 20 to 25
minutes.
Lemon Fluff
1 can frozen lemonade, thawed
1 can sweetened condensed milk
1 large container of cool whip
Graham cracker crumbs
Combine lemonade with milk,
fold in cool whip and sprinkle bot
tom of square pan with part of the
graham cracker crumbs. Pour le
monade mixture over crumbs and
sprinkle remaining crumbs over
top.
Refrigerate before serving.

1/2 gallon vanilla ice cream,
softened
1 large bag Oreo cookies
National Fair.
3. Maintain joint ventures with
the Convention and Visitor's
bureau.
4. Host/sponsor "Hospitality
Training" as appropriate.
5. Continue to provide
information for prospective
residents to Perry (Newcomers
packet).
6. Continue support of efforts
to host 1996 Olympic training
events.
The committee was reminded to
make every effort to attend the
tourism townhall meeting in the
Fairview Room on Feb. 8 at 7
p.m.
The next tourism meeting will
be Tuesday, March 1 at 8:30 a.m.
at the Agricenter for a tour of the
new conference center.

1 (nine-ounce) carton of Cool
Whip, softened
Crumble Oreos and mix with the
ice cream and Cool Whip. Place in
a large dish or pan and refreeze. Cut
in squares to serve.
Serves 12 to 18 people.
Strawberry Pretzel Salad
3/4 cup margarine
3 tablespoons brown sugar
2 1/2 cup crushed pretzels, not
to fine
1 six-ounce package strawberry
gelatin
2 cups boiling water
3 cups chilled strawberries, after
hulled and mashed; or one pound
package frozen berries, slightly
thawed
1 eight-ounce package cream
cheese
1 scant cup sugar
1 eight-ounce carton whipped
topping
Combine margarine, brown
sugar and pretzels and mix well.
Put into lightly buttered 9” x 13”
baking pan. Bake at 350 degrees for
10 minutes.
Dissolve strawberry gelatin in
boiling water. While hot, add to
chilled strawberries. Cool until
mixture begins to set.
Meanwhile, cream sugar and
cream cheese and fold into whipped
topping. Spread cream cheese mix
ture over cooled crust. When gelatin
begins to set, pour over mixture.
