has been of great benefit to the
fruit crop in the way of holding
it back.

Dainties for the Sick Room.
Beef Custard—To about a quar
ter of a pint of strong beef tea,
flavored with a few drops of Wor
cestershire sauce, add a well-
beaten egg and a pinch of pepper
and salt. Pour this into a but
tered breakfast cup, nnd steam
until set.
Apple Float—Stew and strain
two large apples. When cold add
a teaspoonful of sugar, and the
whites of two eggs, beaten stiff.
Serve at once.

ounces of powdered sugai and
three-quarters of a pint of milk.
Pour into a jug, and set this in a
saucepan of warm water over the
fire. Stir with a spoon while the
mixture thickens. Flavor with
orange-flower water.
Bread Jelly—Cut the crumb of
a French roll in slices, and toast
a pale brown on both .sides; put
them into a quart of water and let
the liquid simmer over the fire
until it becomes a jelly. Strain
through a fine cloth, flavor with
lemon juice and sugar, and add
one-half ounce of isinglass while
the jelly is still hot. If a little
wine or brandy is added this will
be found a great improvement.
