Digestion is a complicated 1 l process greatly repaying study.” i —— i PRESERVING EGGS. 1 Eggs may be preserved for six , ' months or a year at a cost of about i , three cents a dozen. The cheapest and i best method is what is known as the i water glass method. Water glass or so ' (Hum silicate can be bought at the drug ’ store for about 30 cents a quart. One ] quart of the water glass is mixed with i nine quarts of clean water which has i been boiled and allowed to cool. It is 1 Important to mix the water glass and 1 water very thoroughly. Some use an j egg beater to get a perfect mixture. A ; i convenient receptacle for the eggs and . i tiie water glass inlxrure is a five-gal ! ion earthenware jar. This will hold about fifteen dozen eggs. Put only fresh, clean, uncracked eggs 1 in the water glass. After the recepta ■ cle is filled’, put something over the ' ■ top of it to prevent evaporation of the . ■ water. Never allow the sun’s rays to fall directly on the receptacle. Start using the eggs as soon as the price has . reached the point of three cents or ' more Higher than it was while you ■ were storing them away.
