Some fam- flies of Leghorns llnrtnr have a tendency of laying under sized eggs. Many Leghorn breeders by care in selecting stock and by feeding secured a large, handsome egg that commands a very high premium :'n most of the markets. Full fed hens, having a well balanced ration, will lav larger eggs than hens on stinted feed. With many flocks the addition of an ample supply of np?at to the ration will cause a marked increase in the size of the egg. Hens with plenty of exercise and comfortable surroundings lay heavier eggs than those in restricted quarters, often eggs ten per cent heavier. The eggs should be perfect in shape, with fresh, clean appearance. Eggs just laid have a bloom; old eggs look smooth and slick. All irregular shaped, undersized, dirty and off colored eggs should be sorted out from the choice eggs and used or sold separately. A fey. undesirable eggs will lower the price of a whole crate. In the large egg handling establishments eggs are sot ted to size, shape and color, and the work of doing this, together with a profit, is taken out of the price paid the poultry grower. Never wash eggs. Re new the nests often with clean mate rial. Keep the houses and yards clean and hens clean ami healthy, and there will be few eggs that will need wash ing. \Vhat few there are should not be sold with the choice ones. The yolk should have a rich orange color, the color uniform throughout, with no specks or spots. All eggs used for eating should be from hens that have no male birds running with them. Such «ggs are infertile. Incubation may start In a single day from hot weather. r>r from three or four hens using tlie same nest, and this causes a growth in Ihe germ that makes an ugly, light colored spot on the yolk, greatly damaging its appetizing appearance. The yolk should stand up firmly. A watery yolk that runs badly and flat tens out when the egg is broken is not appetizing and is caused by neglect in caring for the liens, or in exposing the egg to unfavorable temperatures. Alfalfa, green or dry leaves, produce an ideal color In the yolk when the hens have an abundance of it. The pale, sickly colored yolk found in so many eggs in the winter is often caused by lack of green or succulent feed, and invariably reduces the consumption of eggs. It will pay the poultry grower to make a careful study of the color and quality of yolk that is demanded by the high-class trade, and then learn bow to produce It. The white of a freshly broken egg should be thick, like cream or syrup, an i should appear fresh and glistening. A watery white that runs badly is an abomination. A fresh egg eaten within three hours after it has been laid has such a de licious flavor that it seems not to be the samo kind of fool as an older egg. no matter how good.
