(capons were
I scarcely e*er heard of. except in the
East. This is all changed now. Now
wholesale produce houses all over the
South are striving to get capons.
New inventions, modern methods and
the perfection of automatic removers
and humane spreaders hair- made all
this possible.
It is not hard to make a capon. Any
one can do it. No expensive tools are
required The self working type of tools
now on the market are the best. With
these instruments all that. Is required
Is to push back a slide, press a spring
anti the rest of the work is performed
automatically very much in the same
manner as a binder ties and throws
out a bundle of wheat
Os course, it is understood that some
preparation Is necessary The bird must
be of the right stage of development
and in the right condition. No set rules
■ an he given to the proper size or age,
as individual birds vary in different
flocks. A little practice will show when
they are right. General 1 ,' ’peaking,
when the bird is about like a quail in
size or w hen it w eig-hs one to one and a
half pounds is the right time. This
point is soon determined. The way to
learn is to work on a dead bird or two
—one that you have just killed to eat
After one has practiced a few times In
this way he will become accustomed to
using the tools; then, when he has the
parts to be removed fixed In his mind,
the rest Is easy.
Until after the capon Is six months
old there will not be much difference
observed between the capon and the
young cockerel. After that period is
passed the capon will "heavy down,”
taking on flesh very rapidly. Ry the
time he is nine to twelve months old
he should weigh ten to twelve pounds,
or one-third more than his brother
cockerel of the same age.
At this time the capon will bring
from 20 to 30 cents per pound, live
weight, depending on market condi
tions The rooster of the same age
which has cost the same to raise will
bring at the same time six to seven
cents per pound, and. as he weighs
one-third less, the difference in net
returns is obvious.
