I do not know what he meant, and you can translate the affirmation as you please. But yes terday, I heat ded in bls den Ihe man who. it is said, knows more about eggs and egg mar- kets than any other min in New York. He t<dd nie of a recently received ship ment —from lather a short distance — of several cases of eggs, three-fourths of w hich were rotten on receipt, s > far gone that, as he said. "The board o' health should have seized them.” It certainly looks as though this part of the egg market was so frankly rotten as not to need any quotation mark in, mentioning it! ’ During the past spring, middlemen reported the quality of eggs being re ceived by them a', above the average, some going so fat as to say that it could not be better. Yet autumn eggs, while not often so bad as the shipment referred to above, ate notably poor when they reach ihe comiHissu.n u> n As it is put in the government report on this matter "The greatest number of egg- totally lost is in November, when pi ices to the farmer are very high." Seme investigations of quality, in eggs shipped by i-ountry storekeep ers in October showed that only 25 per cent would rank as "firsts" on Chicago markets. In the government rep >rt of findings as to the trouble in handling our egg crop on it- way from the hen to Ihe market, no gloss is used as to condi tions. While harmful tempeiatui es ; of course, cause many losses, it is slated > thal these difficulties can be largely overcome, and that such handling is now becoming possible as will put our egg crop on the market in reasonably good condition, provided the eggs get to the first refrigerator in good condi tion. The fact that they do not reach the markets in such condition is charged to the piodueei’s dallying, through lack of time in hot weather and through a desire to hold for better prices later in the year, w hen the mar ket is rising. The egg trade is at the present time in a. state of ti ansition. It is beginning to pass from the handling above de scribed to that in which it is rated as "a scientific- business." Cold storage is variously looked upon as a blessing, or an'evil according to Hie prejudices of tlie looker. To have to compote with storage eggs seems to the producer an evil, when this hap pens in August. Two years ago. 20,000 cases were taken out of cold storage in New York, during August Uncle Sam says that this was because good April or even June eggs, cold stored, are better than the so-called fre-h mar ket eggs of August. In the January following. New V< rk used about all her supply of cold stor age eggs and took in almost as many more, many of these latter being < old storage eggs from Western points Dur ing Januarj. then, considerably more than half the eggs used in New Yoik were cold-stored, and most of them were being sold as "perfectly fresh." a few small and dirty lots being labeled "cold storage eggs." The report on the egg trade-, based on rosea * li woi k. with the prestige of our government behind it. expain- that "in all likeli hood" there was not an egg sold, of whatever grade according to label, that was n<>t cold-stored.
