I do n-t know what me, ant. and you can translate the affirmation as you please. But yes terday, 1 bearded in his den the man who. it is said, knows more about eggs and egg mar- kits dhan any other man in New York. He told me of a recently received ship ment from rather a short distance — of several cases of eggs, three-fourths of w hich were rotten on receipt, so far gone that, as he said. 'The boat ! of health should have seized them.’ It certainly looks as though this part of the egg market was so frankly rotten as not to need any quotation mark in, mentioning it! During the past spring, middlemen reported the. quality of eggs bfllng re ceived f>y them as above the average, some going so far as to say that it could not.be better. Yet autumn eggs, w hile not often so bad as the shipment referred to above, are notably poor when they reach the coni.niss.un ... n. As it is put in the government report on this matter "The greatest number of egg» totally lost is in November, when prices to the farmer are very high.” Some investigations of quality in eggs shipped by country storekeep ers in October showed that only 25 per cent would rank as "firsts” on Chicago markets. In the government repirt of findings as io the trouble in handling our egg crop on its way from the hen to the market, no gloss is used as to condi tions. While harmful temperatures, of course, cause many losses, it is stated that these difficulties can be largely overcome, and that such handling is now becoming possible as will put our egg crop on the market in reasonably good condition, provided the eggs get to the first refrigerator in good condi tion. The fact that they do not reach the markets in such condition is charged to the producer’s dallying, through lack of time In hot weather and through a desire to hold for better prices later in the year, when the mar ket Is rising. The egg trade is at the present time in a state of transition, it is beginning to pass from the handling above de scribed to that In which it is rated as “a scientific business." Cold storage is variously looked upon as a blessing, or an evil according to the prejudices of the looker. To have to compete with storage eggs seems to the producer an evil, when this hap pens in August. Two years ago. 20,000 eases were taken out of cold storage in New York, during August. Uncle Sam says that this was because good April or even June eggs, cold stoied, are better than the so-called fresh mar ket eggs of August. In the January following. New York used about all her supply of cold stor age eggs and took in almost as many more, many of these latter being cold storage eggs from Western points. Dur ing January, then, considerably more than half the eggs used in' New York were cold-stored, and most of them were being sold as “perfectly fresh.” a few small and dirty lots being labeled "cold storage eggs.” The report on the egg trade, based on resea.* h work, with the prestige of our government behind it. explains that "in all likeli hood” there was not an egg sold, of whatever grade according to label, that was not cold-stored.—Reliable Poultry Journal.
