It Is not upcom- Ynon during the 1 j summer to have yj I civ ice customers com- plain of the stale- . x ' ness of eggs pul - r •hasod from the 1 ' ' farmer. It is a truth that these J. , ■ r • • ///1 j seldom made to the rrg ular i mil - r \ i"\' 1 rout try \ son for it. Poultrymen make / or the egg? regu- eiii\ three or fout times n day during the entire year—and find it of the ’ greatest importance to do during hot weather. There are nearly always more or less; broody hens in a flock, and these hens f will sit on th< <ggs laid in the nest by ot h< r li*n-. a broody hen ha:- ,■ very ■ high degree of heat In her body, and i it takes only a few hours from her to 1 change the condition of those eggs. Farmers very seldom gather the eggs before night, and the result is that some of them have been covered by the broody hens nearly the entire day. This stales them. Eggs should be kept in a cool place. The pantry or kitchen cupboard is about as undesirable a plae, as could 1 bo selected. The editor some years ago supplied a i large hotel with table eggs during the! summer. A crate was sent regularly, ilwict a day. and no egg was shipped I that was more than three days old. As a further precaution, every egg was candled, so that Its exact condition could be known. For months the eggs ‘ were giving the best of satisfaction, but .one day this complaint came: "liver 1 half in the last crate were stale.” How could if be possible? Those i eggs wore carefully candled and yet we knew the hotel man was honest in his assertions. An investigation fol lowed. The eggs had to lie carried to a railroad Junction, and then taken by train direct to the hotel. <in this par ticular occasion the crate reached tin- Junction about a minute too late for the train, and instead of placing it in the shade until the evening train was due, it was allowed to remain in an ex posed place for hours, with the hot sun shining down non it. A few hours of such treatment aged the eggs. It is Just as important to take care of the eggs In summer ns ft is in winter.— Farm Journal.
