Jones, sta tion chemist at 4 the Idaho expert- Zl (I C IC€ ment station at Moscow, Idaho. r' prints the follow- rrom lowing regarding the preservation of eggs In the bul- till. letin put out by n i. cult'. / ()f{lTt‘y Inquiries re garding cheap an : / k of pc< serving* gg s wr are so frequently received as to indicate that the matter is one of general Interest. Several methods have been proposed and used t with varying degrees of success, but one of comparatively recent origin de serves especial notice because of Its simplicity, cheapness and reliability. Water glass (silicate of sodium) can |be purchased of wholesale dealers In chemicals In 5 or 10-gallon lots and of a specific gravity of approximately 1 4 a’ from 50 to 75 cents per gallon. When purchased of local druggists, It should not cost more than $1 per gallon. One gallon when prop- rly diluted is sufli- I clent to preserve 60 or 65 dozen eggs. For use dilute one gallon of this compound to 10 gallons, with pure, re cently boiled water Mix thoroughly and when cool pour the solution into earthenware Jars of convenient size for the storag, of Ihe eggs. Stand the jars in a ,00l cellar or basement and place In them only freshly laid eggs. The I eggs ma bo kept in the solution or 'merely 'lined into ft several times and I then store ! in a cool, dry place. In ■ ither case the pores of the shells will 1 !>■ -o effectually closed as to prevent , ance of air and the agencies . hic'i • ffect decay So treated, they i will keep perfectly for five or six months, and even longer. The Importance of this fact becomes lapparent when another is recalled: the | market price of eggs during the surn | mer months seldom exceeds 20 cents, while during the winter months it ranges up to 60 and 65 cents per dozen. By the use of water glass when eggs arc cheap the average family can. with no small percentage of profit on the in vestment, easily control the situation. Orpingtons.
