Telling the Age of
Fowls When Found
Upon the Market

Years ago there were more old
fowls put upon the markets than there
are to-day. Then the people would
not part with their laying hens un
til they were too old to lay and get
about the premise*—then was the
time it was thought to sell them. It
mattered but little what the consumer
thought about ii so long as they got
them off of their hands.
In those days It was considered part
of the housekeeper's trade to be able
to tell the difference between a hen
one year old and a six-year-old. It
was a point to notice whether the
spur was hard and tight to the bone
of the leg or rather soft and movable
when you attempted to push it from
side to side. If the former, it was
an old one. ,
The smooth, blight scales on the
legs usually indicate a young hen,
although It is not an infallible rule, for
we have seen hens four years old
retain legs as bright as one a vear
old.
If you are undecided by these
methods, try pressing the underpart
of the bill. If it is very flexible, It is
a young hen; if hard and stiff, it is
very naturally otherw ise. On a young
hen the daws are also rather short
and rather clear looking, and not
stiff.
The turkey when old has long,
hard, strong claws, and hard callous
ed places on the bottoms of the feet.
They also have a long beard when
they are old. Even the hens Ijave
this. It is really easier to tell the
age of a live fowl than of a dressed
one. On a dressed fowl the usual
test is to feel of the point of the
breastbone farthest from the head.
It is rather soft and flexible on a
young fowl, with a feeling like gris
tle. ()n the old ones it assumes the
hard, stiff, bonelike or flinty nature.
The feet, legs and neck of young
fitvvIs are large in proportion to the
size of the body.
A fowl that has been dry picked
will look younger in quality and ap
pearance of flesh than one that has
been scalded. It will look more nat
ural in color of skin and not be so
dull looking. Young ducks and
geese will be plump looking with
flesh of a semi-transparent look.

duck or goose when they are dressed
is to take hold of the toes and pull

Brown Leghorns and want a point
or two from you as to what to ex
pect in the crosses. Should the rooster
have five or six points? Also, should
the comb on the hen stand up straight
like that on the rooster?

Answer: The standard calls for
five points on the male and female
both of the single Comb Brown Leg
horns. This is made as a ruling for
those who are raising exhibition
stock. If they happen to have four
or six points it does not go to show
that they are not pure bred.
Ybu say you are grading up a flock
of Brown Leghorns. If you are really
doing what you say you are we would
say don’t. If you are trying to get a
really fine lot of Leghorns by breed
ing good stock of males and females
onto common or mixed stock you will
certainly have a long and hard road
to travel. The process is too slow.
■ and the time spent is worth so much
more for something else that it will
J pay you very much better to just
buy a good trio to breed from and
raise some really good stock the first
year. Or buy about two or three set
tings of good eggs from a reliable
party. Life is too short and this is
too progressive an age to spend your
time trying to produce what has
taken others years and years of time
to accomplish. Then you have the
choice of buying day-old chicks at a
nominal price at this season of the
year, and they are all ready to grow.
After you have gotten the best stock
that money will buy you will then
have an opportunity to try your skill
at keeping them up to as high a
standard as they were when you got
them. The hen’s comb should not
stand up like the male’s, but should
turp smoothly over to one side of the
head.
