dersonville, North Carolina, through a wind

and at Dun Cragin, the handsome residence
of H. 0. Ewart. SbO feet above Henderson
Title, and 2,800 feet above sea level. Stand
ing in the broad and spacious varandas the
view is beautiful beyond description,

farther yet, the lovely valley of the Oclrla
waha, and beyond all, the everlasting hills
of the Allfghinier, extending for miles and
miles in unbroken ratigoa of lofty, blue-cap,
ped peaks, making in its entirely one of tbo
loveliest landscapes in our beautiful south

courteous reception from the proprietor oi
Don Cragin, who, upon being apprised of the
object of the visit, at ouce consented to af
ford any information in bia power upon the
subject in quation. That subject, I need
scarcely add, was "Carp, the new DtUch im
migrant, its culture and ita future."

“What first led you into the cultivation of
carp upon such an extensive scale?"
"Well,” answered Mr. Ewart, “I will per
haps surprise yon by s.ying that my carp

a small pond prepared for the purpose,
awaited results, the rapidity of their
growth surprised me boyoud measure, and

equal to the shad, and infinitely the superior
of the perch, bass or tucker, 1 at nnca con

ering an area of several acres, sud stocked
them with a lot oi fine carp, only to lose

“How was that?"
their simplicity and economy of construction,
at once concede tbelr superiority over any
knowu system. The screen over the mouth
of the trunk-way is superior to anything of
tbe kind I have ever seen, It never clogs,
iloei not catch the smallest atom of rubbish,
and yet will not permit the escape of the
smallest Ash. The gate Is also an excellent
invention, simple and easy to operate. I can

“Will they only feed upon vegetable or in
sect matter?”
”0h, no! not at, all. Like pigs they will
eat anything. But to make carp culture
profitable, artificial feeding should be dis
penssd with as far as possible, andjthe fish be
rtquired lltc-riilly to'root (or its own living.'
If, however, artificial feeding is resorted to it
should bs cheapened as much os possible.
Commencing in the spring give them lettuce
leaves, turnip tops, and kitchen ecraps.
Later feed cabbage, leaves, melon rinds, sweet
com, squash, etc., and in tho fall pumpkins,
boiled turnips, cabbage, potatoes, etc. They
seem especially fond of pumpkins, and the
fry will literally 'gilt' a large s'zrtl one.”
•'Much difference of opinion seems to exist
as to the edible qualities of the carp. What
is your opinion of the fish?"
"As 1 told you, be(n;e embarking in the

myself on that point by eating soma of my
carp. They were taken after the spawning
season, late in Ibe fall, and were plump and
in good condition. I tried them baked and
fried, and found them far superior m llavor
to the mullet or perch, and very nearly If not
indeed quite the equal of tho shad. The
llesli is very whi'e and about the same con
sistency as shad.”
"Were they bony?”
"All fish, 1 believe have bones, but thecarp
as free from them as any tiab I know of.
Indeed with the la gn carp, the bones give no
trouble, the llesli Halting olf nicely. Carp,
however, should not be eaten during the
spawning season, or immediately thereafter.

A few moment's walk and wo were ai a
,Tamil pond of clear water, covering an area
-of a quarter of an acre, just above and coo-
-nected with a ovely atieet of waler covering

"Pills am,til pond," said Mr. Ewart, "is ray
-batching pond. Ilia fed by waler from adja
cent springs conducted in wooden troughs,
and is from four feet to two .nebes in depth.
It is, as you ace, well supplied with needle
gram, pickerel weed, water lilies, and olbcr
aquatics. The five-acre pond below is Mm

Every third year the atock pond will he
drained, and the lam carp taken therefrom
and placed in email market ponde, where
they will be fed regularly and taken as re
quired. Tbe nursery pond is fed by a pure,
mountain creek, the water of which has been
placed under control by digging a ditch ten
feet wide at the moulh ot the pond and
around tbe pond. This canal, or ditch, in
high water carries the surplus water around
the pond, on automatic gate at tbe junction
of ditch and pond, only permitting a sum
clent quantity of water lo enter the pond,
thus keeping it at a uniform depth summer
and winter. This automatic gat* is so
screened as to prevent any ingress or (grew
of Ibeemalleatfiib. AU of my ponde have
tbe 'Jones dam,' which, alter careful consid
eration and practical trial, I unhesitatingly
pronounce iron walls against musk rats, craw
fish, et id omae genus. They have withstood

fected and rendered unfit for table use, il

8. F. Baird, recently sent into twenty-tbreo
aUtisandeL'bt territories letters of inquiry
as to Mia table qualities of tbe carp, addressed
to parties who bad eaten the Halt. He re
ceived 2-12 replies, out of this number 229
iimde favorable mention, the mead of praise
running from “good," to "very fine." C

"How large do the carp grow ?”

often caught weighing from 50 to 75 pounds
"I have them weighing 8 ji muds, three
years of age. In South Carolina,Georgia, orthe

they will not grow with such rapidity.”
"At what age, will they spawn?"

"Can the mate be distinguished from the
female?”

"Are they prolific?"
"Wonderfully so. Last Sep'ember I caught
a female carp weighing only 1!1 pounds that

carp weighing 5 pounds is said to contain
WO.OtO eggs. Unlike other flab, they do not
spawn at certain seasoui, but drop their eggs
as soon aa each female a'tains maturity,
whether that be in AprilorNovember."

"That depends! II artificially fed 1 should

number. A carp pond proparly cared foratnl

of five hundred dollars per acre. ^Tbis will
lead acotton farm, won't it? There is ul-
wuys a demand for frrati fish, and they cun
readily be told nt ten cents per pound. At
that price, the profits per acre would be enor
mous, provided always that proper care is
given the ponds, for carp have many ene
mies."
"What are they?"
"Green frogs, musk-rate, lurtlei, snakes,
cranes, herons ami kingfishers. The only
remody is tbe sbo' gun, and it must ha used

and summer months. Otherwise your carp
will snon be exterminated. 1 have killed a
blue crane with a pound and a half carp
swallowed whole iu its throat. Tbe ponds

"Do carp hibernate in this climate in tbe

"I doub'. it. The past whiter was a very
severe one, my ponds often being covered
with (our inch ice, yet as soon astt disappear
ed I could see indications of the carp moving
about in the water. But they do not seem to
feed during tbe wtuter, at least not to any ap
preciable extent"
"Can large carp be shipped any diatisc?

•'O, yet! it is almoat impossible to kill a
csrp. They are wondtriully tenacious o( life.
L*et September I caught a two pound ctrp,
placed it in an empty bucket, and after a walk
ot half a mile and a delay of at least three-
quarters of an hour placed it in a tub of
water. To my surprise, in a few seconds it
wee as lively as when first taken from the
pond. I am now (hipping breeders over the
slates, so far without lorn."
“Of the three varieties, scale, mirror or
leather, which do you consider th* most pre-
fsreble?”
"There is really no diiTerence. If the ponds
ore not impure and if not eaten duting the
spawning season the Hsvorof the fish Is about
the tame. The leather carp it the hand-
eomest fish of the three."
"Are carp subject to any disease?"
"Yea, and a very deadly one, fungus, a
moldy growth on its back, caused by impure
water, sometimes by wounds, often from a
weak condition o( the fith. There la no cure
for iL Whenever it appears, the only thing
to be done is to drain the ponds, kill all the
diseased fish and commence, as tbe lawyers
have it, “de novo.”
"Will the carp hybridise with other fish?"
‘T doubt it, except it be with members of
ita own.ftmily, tbe cypriuids*. With the gold
fish it would readily hybridise,but I am satis
fied not with the base, or trout, or perch.
Still carp should be kept to themselves, as
other fish of every variety, even to the tiny
minnow will prey upon their spawn.”
"Do carp ever destroy their own spawn?"
"Yes, os soon os it it deposited, if the pond
does not afford them sufficient frail.”

art, but will venture to give a few receipes.
