I of bakers. A barrel of dour is ernp
; tied into the kneading trough, ii
! eon.,dns 106 pounds, and before
the Ist© risoin price could be got
| for $5, On top of tho flour 101
! pounds of water is poured, and the
j baker has 300 pounds of dough to
j begin work upon. In briet time
the dough is fashioned into twilsts
and pan-loaves, home-made bread
and all the other styles of loaves
and rolls. When that 300 pounds
of dough in tho shape of bread and
roils comes out of the oven the best
has reduced the weight about forty
pounds, leaving 260 pounds for sale
over the counter. Prior to the
change in the price of flour the
bread and rolls were sold at an av
eraga of 41 cents a pound, thus
bringing in $11.70 for Ihaeost oi
their barrel of flour and the labor
expended upon it. From this cal
cuiation, which is based on infoi|
mation received from men interest
ed in the business, it would seem
that the average baker who has a
reasonable trade ought to be in a
fair way to make good profits.
Emergency Bread of Turni js.
There was a dearth of wheat in
England in 1G29, 1630 and 1693,
and in those years bread was made
of turnips. They were boiled un
til were solft enough to mash, then
the greater part of the water was
pressed out of them. An equal
weight of wheat meal was *lllOll
mixed with the puip, and the
dough was made in the usual man
ner with yeast. The dough rose
well in the trough, and after being
kneaded was formed into loaves
and put in t.he oven. Bread pre
prepared in this manner had a pe
culiar sweetish taste, which is said
to be not disagreeable; it is as light
and white as wheaten bread, and
should be kept about twelve hours
before being cut, when the smell
and taste of the turnip will scarcely
be perceptible.
