Take young, tender peas, ami put into n stewpan with suflieient fresh butter to keep them from burning, but no water ; season them with a little black pepper and a very littlo salt; set them over a moderate lire, and stir them about till the butter is well through them ; thou let them simmer till quite soli and .lightly broken, taking off the lid occasionally, mid give them a stir up from the bottom; if you find them becom ing too dry, add some more butter; wh'-ii done, drain off what superfluous butter may be about the peas, nud send them to table hot. They will he found excellent To the taste of many persons they w ill be improved by a lump or two of loaf sugar put in with the butter, and also by n few sprigs of mint, to be removed before the peas go to table. Make a erust as for a fruit pudding, roll it out to fourteen or fifteen inches in length, aud eight or nine in width ; spread with raspberiy jam, or any other preserve of a similar kind, and roll it up in the manner of a collared eel. Wrap a cloth round it two or three times, and tie it tight each end.— Two hours and a quarter will Util it. A good cheap Cake. A pound and a half of flour, a quarter of a pound of butter, three quarters of a pound of raisins, a quarter of a pound of augur, one egg, a teaspoouful of carbonate of soda, anti half a pint of milk—the milk to bo made warm, ami soda dissolved in it.
