■ marches and military campaigns. It is a
matter of common experience that people
aro made corpulent by eating starchy
foods, and these unwieldy bodies are not
so healthy and workable as the leaner
bodies of other people. A good diet for
persons who want to reduce flesh is mado
up of leguminous, foods, and theso havo
been eaten in such cases with successful
result. It is not easy to over eat the
leguminous foods, for they soon satisfy
tho cravings of hunger; Professor At
water, maintains that the bodily ill^ re
sulting from over eating ore greater and
more common than those resulting from
tho intemperate uso of alcoholic drinks.
Whether tliis is fully true or' not, tho ills
from over eating aro incalculable, and
they would liavo been and would be
greatly reduced ‘if beans had been sub
stituted for wheat.
Other things equal,, tho bean eater will
prevail over tho wheat eater and over the
potato and . the rice cater. The Arabian
bean eaten came within one battle of
spreading. Mohammedan civilization all

bean over wheat woultP have made Eu
ropeans a stronger nnd better nourished
peoplo tlmn they lie been as wheat

would have liad the to,., that would
havo made possible, not to a.;/ ; reliable,
a higher .legivo of intelligcnee.
If lieanu had been substituted for wheat,
tho effect on tho agriculture of tho world
'would havo lieen incalculable. In Massa
chusetts, in 1880, 083 acrc3 produced
15,708 bushels of wheat, or 10 1-3 bush
els per acre. Tho average product in tho
United States in that year was but 18
bushels. Tho product of beans in Massa
chusetts in 1375 was 41,870 bushels from
1,354 acres, or 81 bushels per aero.
Therefore, siuco lieans are about two and
a Half times as 'nutritious ns wheat (tho
animal fat mixed with cooked beans re
duces tho exception in the matter of
fuel), and since an ncre produces twice
as much beans as wheat, thou it follows
that five times more nutriment is got
from an r.cvo'of beans than from an aero
of wheal.
The western farmer might till but one
aero in live of liis wheat area if ho could
raise lo". and jxxiplo would eat them

census of 1880, and tho same amount of

ducing sustenance for the human race,’
taking account of tho land in tho United
States alone. When tho time comes,
which is generally expected when tho
pressure of population will try tho ability
of tho soil to sustain it, the substitution
of beans for wheat' wUl bo a livo ques
