animal or the persimmon, which was
gradually contracted into o'possum.
It is useless to say that the ’possum
Asa nocturnal animal, and is caught
* by means of dogs who treo him in
some small treo which is easily cut

’possum hunters will tell you that tho
bigger a 'possum is the smaller tho
tree in which he is caught, and it is
* the young 'possums, that climb a
■ largo tree when pursued by tho
dart. ,
Throo or four years ago our commis
sion merchants began baying a few
’possums from the country and selling
them ton few select Customers in At-
n Wtcinm nnw
/DOSS!
Had then _ found its wa^ into llio city
through tho agency of some great
’possum warrior, who always founf
ready solo for this toothsomo ai'
Everything lias changed sinco then,
and the ’possum has, dire
, :i rough no ef
forts of hiswn, orison to a very im
portant place in the commercial world.
One commission' merchant informed
mo that ho handled 300 'possums a
month, and at Folsom’s restaurant 100
of these ordinals are butchered every
month and served out to those who
aro fond of them, and that means
nearly every southern raised man.
The majority of tho 'possums sold in
Atlanta come front , tho country mer
chants, and a largo percentage of this
number come from up on the Marietta
and North Georgia railroad, a section
of tho country which is regarded os
the finest in tho world for grapes, ryo,
'possums and com liquor. A number
of countrymen living tn Fulton county
catch many’possums during the sea
son, and somotimes thoy brtng them
in by the wagon load, os they would
bring in a load of chickens.
’Possums are sold at various prices,
governed according to tho size of the
animal. Tho kittens bring from 20 to
10 cents, while tho full grown range
"" sum is
from 40 cents to $1. Tho ’possum
ripe by tho 1st of September, and ho is
pulled until tho 1st of March. Tho
average sum paid for 'possums a mouth
during tho season will amount to
something over $500, making tho ’pos
sum crop worth about $4,000 to At
lanta.
A dish of ’possum and taters at the
restaurant will cost you 30 cents, but
if you want a ’possum supper it will
eost you from $1.50 to $2. A ’possum
cupper consists of a whole ’possum,
hatred with sweet potatoes, and then
there’s com bread and coffee thrown
in as extras, for ’possum and taters, to
bo enjoyed, must bo eaten with com
bread. There's it very remarkable
thing about ’possum meat. It is as
greasy os tho meat of a liogj but, un-
liko that, it can bo eaten with safety
by persons with tho weakest digestion.
It won't till you up like pork or other
meat, hut you can eat a very largo
quantity of it and feel no bad effects
from so doing.
’Possums arc caught in a mile and a
half of Atlanta, and, as I said before,
they aro 55 numerous and prolific as
rabbits. My brother, in coming homo
very lato 0110 bright, moonshiny night
last winter met a very largo and very
fat old ’npssum on Wheat street, and
after a littlo persuasion tho ’possum
was induced to accompany him home.
Tho next day that’possum was tho
leading attraction at (ho dinner table.
If you liavo, never tasted ’possum
meat you havo lived in vain; if you
have never inhaled tho delicious fra-
granco arising from a dish of ’possum
and ’tatbrs, lilo lias been hut a mock
ery to 3 ou, and if you do not get you
a ’possum and bake him with sweet
potatoes for your dinner to-morrow
you’ll regret it oven to tho end of your
life.—Atlanta Journal.
