BREAKFAST.
Cream of
• rtough drifid beef to make one cup and
plac*. in a hot frying pari with a plecj
of butter. Htir one minute, add a cup
and n half of milk, a piece of butter and
boll one minute. Dissolve a tablesp* in j
of flour, add to the beef and boll one j
minute longer.
Eggless Corn Muffin*—Mix half a cup •
of sugar. two tablespoons of butter, a j
cup of sotir cream, a cup of flour, two !
and a half cups of corn meal* and a tea- i
spoon of soda. Bake In muffin tins, j
LUNCHEON.
Fish Mold.- Pour half a cup of boiling
water over half a cup of bread crumbs,
and lei stand fifteen minutes, then add
a cup of shredded codfish, a tablespoon
of minced olives, the same of butter, I
one egg. and a cup of milk. Turn into a
buttered mold and steam three-quarters j
of an hour.
Gingerbread Mix half a cup of sugar j
a quarter of a cup of butter, one egg. a 1
quarter of i cup of molasses, a cup of
flour, a teaspoon of soda, half a teaspoon i
of ginger, and half a cup of boiling water.
Bake In a moderate oven thirty minutes. I

Creamed Spinach—Wash and boil until
tender. Drain, chop fine, add a cup of j
milk, salt, pepper, and a piece of but- !
ter. come to a bard boil.
Tomato Jelly Salad itoi 1 four torna- J
toes, a teaspoon of brown sugar, a tea- j
spoon of vinegar, salt and pepper. Strain. I
add a teaspoon of gelatine that has j
been dissolved in a quarter of a cup of j
cold water, and turn Into small molds.
Serve on lettuce with a dressing made j
by mixing a teaspoon of salt, the same
of mustard and sugar, a tablespoon of !
melted butter, half a cup of vinegar, j
three-fourths of a cup of milk, and one
egg. 801 l one minute nnd add two tea- J
spoons of flour dissolved in a little cold
water. Roll until thick and chill.
Blueberry Slice Mix two cups of flour 1
with n heaping tablespoon of lard, a cup
of milk and a teaspoon of baking pow
der. Roll out, la*' in a buttered baking
dish and cover with blueberries. Sprinkle
with brown sugar and bake fifteen min
utes.
