€imple Method of Preserving Them
for at Least Eight Months,
Fresh eggs in cold storage at 34
degrecs Fahrenheit undergo little I
any change, for this tempera.turt? is
sufficien: to limit the activities and
prevent the growth of the more com
mon bacteria.
The problem of preserving eggs by
excluding ailr has bdbrought forth num
erous rmethods. Acording to Ameri
can Medicine, German investigators
geveral years ago eonducted a seriea
of tests, keeping the eggs for about
eight momths in some twenty differ
ent ways, and found that
Immersed in brine, all were unfit
for us.
Wrapped in paper, 80 per cent. bad.
Packed in bran or coated with par
affine, 70 per cent. bad.
fmmersed in sol. salicylic acid, 50
per cent. bad.
Coated with shellac or collodion,
40 per cent. bad.
Packed In wood ashes, 20 per cent.
bad.
Coated with vaseline or immersed
in a 2 solution ¢f water glass or lime
water, none bad.
From these experiments, as well as
many others, it has been found that
a -sclution of water glass offers about
the bes: method of preserving eggs,
aside from cold storage. Water
glags is the common name for potas
glum or sodium silicate, and is ,ob
taindd in the shops in the fonm of a
thick liquid scmething like glycerine.
One part of th!s to nine of sterile
water makes a preserving fluid of the
prover strength.
The eggs should be packed in a
clean, sweet vessel, and the sohution
poured over them until they are well
covered. Preserved in this way in
a coo] place, they will keep for
months and often cannot be distin
gulshed In appearance from the fresh
article. It is generally conceded that
they lack the flavor of new laid
ezgs, but are in no way inferior in
nutritive value, :
