ECONOMY IN THE KITCHEN
Some Wy In Which the Ordinary
Waste Can He Avoided.
It is a common saying that three
French families can live on what one
American family throws away, and
certainly the French know the secret
of combining delicious fare and a well
kept house with the strictest economy.
How many cooks are there who
throw away odd bits of bread? Not
one scrap of bread should be wasted.
All pieces of crust and toast trimmings
should be baked, pounded and put into
a tin ready for game or gratins. Whit,
pieces should be made into crumbs,
stale slices cut into croutons and snip
pets and odd pieces used for puddings
Potatoes come next on the list, and
there are any number of ways in whirl
these may be utilized.
Meat bones, scraps and tough pieces
of meat as well as carcasses of chicken
or turkey make excellent soup stock
Small portions of vegetable add mud:
to the flavor. Left over spoonfuls ot
gravy or sauce may be used in season
ing cold dishes of meat or fish.
Fish bones are Invaluable, especially
for soup. Beef drippings well clarified
make excellent short pastry ami plain

cakes, while fat of all kinds is the best
possible medium for frying. Remove
the grease from the water in which
meat has been boiled, and save the
grease after roasting or frying meats.
The remains of cold fish may be con
verted into, tiny souffles steamed or
baked amt appropriately seasoned with
grated cheese or chopped herbs.
Indeed if a cook's inventive faculty
is aroused there is no end to the plans
she will devise for using up the once
despised scraps.

too, because she didn’t wait to see
whether it fitted or not, but stitched
the seams right up), and then 1 took
the greatest pains to go and vote just
as they’d told me to, and what do you
suppose Henry Pratt told me after
ward? My vote was thrown out be
cause I had the frankness to write my
full name and address on it!

University of Georgia.
The 102d session of the University
of the state will open on September
18th. This institution is organized in
three departments, Academic, Law and
Agricultural There is no tuition to
residents of the state except in the
law school. In agriculture the courses
have been increased and enlarged so
as to embrace a short winter course,
a one-years course and a full course.
