Wilma Gay Shares Recipes Collected From Many Moves BY PAUUNE LEWIS ~ “ Staff Writer Wilma Gay is the Houston Times-Joumal's Cook of the Week. Bom in Pulaski County, she gradu ated from Hawkinsville High School. It was while working and taking clerical training at Robins that she met and married Martin Gay. He was in the military service and had lived in Chicago, Miami, California and Louisiana prior to coming to Georgia. His military career took them to Eglin AF Base, Fla., Trier, Germany, Lake Charles, La., Pasadena and Fort Worth, Tex. When in Louisiana, Wilma worked as a secretary in an adoption center, the Edna Gladney Home for Unwed Mothers. While Martin was at the Southwestern Seminary, Wilma worked as a secretary. Upon completion of his training, Martin worked with Campus Crusade for Christ, or military ministry, in Eglin, San Bardino, Atlanta and Montgomery, and as Education Director in Tampa for five years before retiring and coming to Perry thirteen years ago. Shortly after becoming a Christian, Wilma started teaching small children in Sunday School. As she trained, she taught older children. She has been teaching adult women at First Baptist Church since she has been in Perry. Martin is Director of the Children's Division and teaches fifth graders. The Gays have one daughter, Marsha Gay, who has been a Flight Attendant with Delta Airline since 1967. She lives in Covington, La., and flies out of New Orleans. In their so-called retirement years, Wilma and Martin aren’t sitting down with folded hands. Wilma has been selling Mary Kay beauty products for almost 14 years and, for the past five years, has qualified for Queen's Court in sales. She has until July 1 of this year to make Queen's Court for the sixth consecutive year. Martin helps in this project and plays golf. Wilma grows African Violets; both work in the yard and, of course, both are active in church affairs. Wilma likes to cook and collect recipes. She recommends the following recipes which she has ac quired in her many moves about the country JAVANESE DINNER (serves 40 - may be reduced for smaller numbers. Great for serving to a crowd. Serve as a buffet in order given.) On each dinner plate place the following: a large serving of rice patted down. 2 Tbsp stewed chicken pieces in clear chicken gravy (can be flavored with chicken bouillon and spices to suit taste, such as celery or mushroom soup) Georgia Senate Passes Two Bills A major piece of economic development legislation proposed by Gov. Zell Miller won Senate approval on Wednesday. House Bill 1527 is a statewise economic incentive package aimed at attracting and retaining jobs and industry. The measure would enhance the Job Tax Credit Act, which was passed in the late 1980's. It would allow every country in the state now covered by the law. The bill would also provide investment tax credits to businesses and provide special tax breaks for companies involved in pollution control, defense conversion and equipment modernization. Sponsors say the legislation will prepare Georgia for the tough competition among neighboring states in attracting new business and industry. The bill was sponsored by Senators Mark Taylor, Robert Brown and Guy Middleton. The Senate passed and sent to the House a bill to ensure that all Georgia students are eligible for HOPE (Helping Our Pupils Educationally) scholarships, including special education students. The bill, by Senators Chuck Clay, Sallie Newbill and Bob Guhl, requires that criteria be established to guarantee that all students have access to the scholarships. Supporters say that HOPE scholarships have not been available to some students with various physical handicaps or retardation problems because the students do not conform to the grading requirements spelled out by HOPE. To serve 40, prepare the following quantities: 5 stewed chickens in clear gravy 11/4 gallons fried noodles or rice 2 cups onions 3 cups celery 5 cups cheese 5 cups coconut 5 cups pineapple 5 cups almonds LEMON FROSTED ANGLE FOOD CAKE 1 22-ounce can Lemon Filling 1 9or 10-inch round angel food cake (or 2 loaf) pans 1 8-ounce carton lemon yogurt 1 12-ounce carton cool whip, thawed Lemon juice from 1 lemon Cut cake into 4 layers using a serrated knife. Combine filling and yogurt in a medium bowl and blend* well. - ~Spread 1/3 of the filling (about 1 cup) between each cake layer. Frost top and sides with whipped topping. Refrigerate or freeze. Senate Bills 710 and 711 provide "safety nets" in the event that lottery revenues decrease and threaten the fate of lottery-funded programs. Georgia Patrolmen Arrest 278 In Feb. The Georgia State Patrol in Perry announced today that five traffic accidents in Houston County were investigated during the month of February. These accidents resulted in no injuries and no deaths. In the area of enforcement by Post 15, Sergeant First Class K.W. Hancock said his officers had made 278 arrests and issued 346 warnings during the month. He also pointed out that fines and forfeitures amounted to $28,711 for the month of February which was paid to the courts of Houston County. Bake in a 13 x 9-inch baking pan, greased, at 330 degrees F. for 23-30 minutes. Cut into squares when semi-cooled. MOTHER S CHRISTMAS PECAN CAKE 1 qt. whole pecans 1 1/2 ounces lemon extract 4 cups all-purpose flour 3 cups sugar 1 Tbsp.. baking powder 6 eggs 1 pound butter 1/2 pound candied cherries, red and green 1 1/2 pounds candied pineapple 1 pound white raisins Fill a 1-quart jar with whole pecans. Add lemon extract and soak overnight. Preheat oven to 300 degrees. Grease and flour a tube cake pan, lining the bottom with brown paper, also greased and floured. Cream butter and sugar. Add eggs and mix well. Add baking powder and flour, mixing well. Add fruits and nuts, mixing in with hands. Spoon into prepared tube pan, slightly flattening top. Bake 2 hours and 30 minutes at 300 degrees F. Cool 30 minutes and remove from pan.
