Margeen and Roger have led interesting lives through their in volvement in the military. This week, Margeen is the Houston Times-Joumal Cook of the Week. Margeen was born in Los Angeles, Ca., daughter from a mili tary family accustomed to moving about with assignments. She has one brother in California who works for Sierra On Line, maker of computer software, and a mm who is a "health foods freak". From her, Margeen learned about nourish ment. Upon graduation from Yosemite Union High School in Oakhurst, Ca., she joined the United States Army where she served for two and one half years in communications. She took her basic training at Fort Dix, NJ. and her further training at Fort Gordon, prior to being as signed to Frankfurt, Germany for two years. Roger was bom in Gallatin, Mo., one of five children. Margeen studied cooking in school but says that she has learned much from her mother-in-law and still calls her to ask about cooking some special dishes. Roger also joined the United States Army, and in due course was also assigned to Frankfurt. Their meeting was wok-related. After dat ing several months, they were mar ried in Svendborg, Denmark in 1984 and she the left the military service. After marriage and four years of Army service, Roger left the army, went to the air Force and was sta tioned at Richards-Gebaur, Mo., from which he was transferred to Dobbins Air Force Base in Marietta. From Dobbins, Roger, a SMSGT with the Air Force Reserve, was transferred to Robins and serves as Personnel Systems Manager. Margeen says that she is a "professional mom, house manager, etc., with whatever is to be done in a household." She, as a teenage, had dreams of being a cosmetologist, an interior decorator or a dancer. She does her own hair, decorates her home and dances in the dark to her own music, she says, laughingly. She enjoys reading Christian liter ature and mystery stories, likes do ing some home crafts, singing, playing the autoharp, drama, ice skating and skiing. She also paints and writes, having written the scripts for her puppet shows and for a church publication for AdvenL In school, she sang with a group, the "Christianaires" in competition at Estes Park and they won first place. Roger is "into computers" and likes golf, tennis, basketball and fantasy football. The following are some of the Woodys’ favorite recipes. They hope that you will enjoy them. BANANA NUT BREAD 1 3/4 cups all-purpose flour 1 1/4 teaspoons baking powder 1/2 teaspoon baking soda 2/3 cup sugar 1/3 cup shortening 2 eggs 2 tablespoons milk 1 cup mashed ripe bananas 1/4 cup chopped nuts (optional) Stir together flour, baking powder, soda and 3/4 teaspoon salt. Set aside. In a mixer bowl beat sugar and shortening with electric mixer till light, scraping sides of bowl of ten. Add eggs, one at a time, and the milk, beating till smooth after each addition. Add flour mixture and banana alternately to creamed mixture, beating till smooth after each addition. Fold in nuts. Turn batter into a lightly greased Bx4x2-inch loaf pan. Bake in a 350 degree F. oven for 60-65 minutes or till a wooden pick inserted near cen ter comes out clean. Cool in pan 10 minutes. Remove from pan; cool. For easier slicing, wrap and store overnight. Makes 1 loaf. CHINESE SALAD 1 medium cabbage 2 bunches green onions 1 small can sliced water chestnuts 2 packages "oriental" ramen noo dles (save flavor packets) 400 CARROLL BLVD. In large bowl combine cabbage, onions, and water chestnuts. In large skillet, melt butter. Saute' the almonds, crushed ramen noodles, and sesame seeds until brown; stir constantly. In a small sauce pan bring vinegar, soy sauce, flavor packets, and oil to a low boil. Combine all ingredients together and stir. Cover and let cool for one hour in refrigerator. PEACHY CHICKEN 3 lbs. chicken pieces 1/2 cup flour salt and pepper to taste 2 tablespoons melted margarine 1 8-count can refrigerator crescent rolls 1 29-oz. can sliced peaches, drained Rinse chicken and pat dry. Coat with mixture of flour, salt and pep per. Place skin side down in mar garine in 9x13-inch baking dish. Bake at 425 degrees F. for 45 min utes, turning chicken over after 30 minutes. Push chicken to end of dish. Arrange prepared rolls in other end of dish. Top chicken with peaches. Bake for 13 minutes longer or until rolls are brown. Yield: 6 servings. TANGY PECAN PORK CHOPS 6 pork loin chops about 3/4-inch thick 2 tablespoons Dijon mustard 2 tablespoons mayonnaise or salad dressing 1 tablespoon vegetable oil 1/2 cup pecans 1 slice white bread tom into pieces 4 sprigs fresh parsley (or 1 table spoon flakes) 1/2 teaspoon salt Slash fat diagonally at 1-inch in tervals around edges of pork chops to prevent curling. Mix mustard, mayo and oil. Place remaining in gredients in blender. Add water, mixing well. Add bread cubes, tossing to coat; remove and discard garlic. Spread bread cubes evenly on a baking sheet, and bake at 325 degrees F. for 20 minutes or until golden. Yields 1 1/2 cups.
