Recipes from winners of bake-off BY PAULINE LEWIS Staff Writer Virginia Nadeau was in charge of the Bake-Off held Saturday, April 2, during the Dogwood Festival. The following are the entries and their recipes. Sheila Gentry received a first place and Best of Show for her Swedish Cake. She also received a first place and Best of Show for her Pecan Pie. Lisa Gentry, her 11- year-old daughter, who has been cooking on her own since she was eight, won first place for her Chocolate Peanut Butter Cream Pie. Phyllis Thompson won first place for her Decorated Cake and first place for her Sweet Potato Pie. Matt Christian won first place for his Pound Cake, and Kathy Whitten won first place for her Blueberry Sky Pie. SWEDISH CAKE (Sheila Gentry-First Place and Best of Show) 1 1/2 cups sugar 2 cups flour 2 tsp. baking soda 1 tsp vanilla 2 eggs 1 can (20 oz.) undrained crushed pineapple 1/2 cups pecans Mix all together by hand. Pour into greased 13x9-inch pan. Bake at 350 degrees F. for 35-45 min. Don't Over Bake! Frost while warm with Cream Cheese Frosting CREAM CHEESE FROSTING FOR SWEDISH CAKE 1 stick butter or margarine 1 8-oz. cream cheese (softened) 1 tsp. vanilla 1 3/4 cups Powdered Sugar 1/2 cup pecans Mix all ingredients, except pecans, together well and spread on warm cake. Sprinkle with crushed pecans. PECAN PIE (Sheila Gentry - First Place and Best of Show) 1 8-inch unbaked Pie Crust 3 eggs, beaten 3/4 cup light com syrup 1/4 cup sugar 1/2 cup brown sugar 3 Tbsp margarine, melted 1 tsp. vanilla 1/4 tsp salt Mix above together thoroughly. Pour into crust. 3/4 to 1 cup coarsely chopped pecans Sprinkle over top of pie and bake at 350 degrees F. for 40-45 min utes. PIE CRUST 1 cup plus 3 Tbsp. flour 1/3 cup oil 2 Tbsp. milk Stir together. Roll between wax paper. Sprinkle counter top with water to keep paper from slipping CHOCOLATE PEANUT BUTTER PIE (Lisa Gentry - First Place) 1 graham cracker crust 1 large box of chocolate pudding mix - not instant 1 cup milk 1 cup crunchy peanut butter 1 small container of cool whip 2 Tbsp. crushed peanuts Cook pudding according to pack age directions. Stir in 1 cup peanut butter. Refrigerate overnight. Spread cool whip on top. Sprinkle with nuts. MATT'S POUND CAKE (Matt Christian - First Place) 1 box Duncan Hines Moist Deluxe Cake Mix 1 box (4-serv.) vanilla instant pudding mix 4 eggs 1 cup water 1/3 cup applesauce Frosting as glaze Preheat over to 350 degrees F. Flour and grease 10-inch Bundt pan. Combine all ingredients except frosting. Beat on medium for 2 minutes. Pour into pan and bake for 50 to 60 minutes. Cool. TRUSTING Melt 1/2 cup sugar until thin. Drizzle over cake. Can add sprinkles for decorations. DRIZZLED PEANUT BUTTER PIE (Sandi Christian-Second Place) 1 8-oz. cream cheese. Soften to room temperature. 3/4 cup powdered sugar 1 8-ounce carton cool whip 1/2 cup milk 3/4 cup crunchy peanut butter 1/2 cup chopped peanuts (Planter's Honey Roasted are excellent) 9-inch graham cracker crust or make your own (1/2 cup crumbs (20 squares)) 3 Tbsp. sugar &BHk ' I flilfl ill iff 11? • I Jt&Bßr*'*'' w ff§ Sheila Gentry and her daughter Lisa. 1/3 cup melted butter. Mix above 3 ingredients. Press firmly in pie plate. Bake at 350 degrees F. for 10 minutes. Cool. PIE Whip cream cheese till fluffy. Beat in sugar. Fold in milk and peanut butter. Fold in cool whip. Pour into pie shell. Sprinkle the top with chopped peanuts. Refrigerate 2-4 hours till firm. Slice and drizzle with syrup before serving. SWEET POTATO PIE (Phyllis Thompson - First Place) 2 cups to 2 3/4 cups sweet potato (mashed) 1 1/4 cups sugar 1 small can milk 2 eggs 1 stick butter or oleo 2 tsp. vanilla Mix oleo/butter. Add 1 small package vanilla instant pudding mix. Bake at 325 degrees F. for 45 minutes to 1 hour. BANANA CAKE (Phyllis Thompson - First Place) 1 cup shortening 2 cups sugar 2 eggs 2 cups mashed ripe bananas 1 teaspoon vanilla 3 cups sifted Martha White Cake Flour 1 teaspoon salt 1 teaspoon soda 1/4 cup buttermilk 1 cup chopped pecans Preheat oven to 350 degrees F. Grease and flour two 8-inch square or two 9-inch round cake pans. Cream shortening and sugar until light and fluffy. Add eggs one at a time, beating well after each addi tion. Add bananas and vanilla; mix well. Sift together dry ingredients; alternately beat into creamed mix ture with buttermilk, beginning and ending with dry ingredients. Stir in pecans. Pour batter into prepared pans. Bake 40-45 minutes, or until cake pulls away from sides of pan. Cool and frost with Banana Frosting, if desired. Note: Cake may be baked in a 13 x 9 x 2-inch pan for 50 to 60 minutes. CREAM CHEESE ICING 1 box confectioners sugar 1 package cream cheese 1 tsp. vanilla. BLUEBERRY SKY PIE (Kathy Whitten - First Place) 8-ounce package cream cheese 6-ounce can frozen lemonade 14-ounce can sweetened condensed milk Harris completes training Marine Pfc. Joseph D. Harris, son of Robert J. Harris Jr. of Bonaire, recently completed recruit training. During the training cycle with Recruit Training Regiment, Marine Corps Recruit Depot, Parris Island, S.C., recruits are taught the basics of battlefield survival, introduced to typical military daily routine, and personal and professional standards. All recruits participate in an active physical conditioning program and gain proficiency in a variety of military skills including first aid, rifle marksmanship and close-order drill. Teamwork and self-discipline are emphasized throughout the cycle. Although the Marine Corps is scaling back, its investment in high-quality recruits continues. The Marine Corps has more than 38,000 job openings this year. 8-ounce carton cool whip 21 ounces blueberry pie filling 2 graham cracker pie crusts Beat cream cheese until creamy. Add lemonade and condensed milk; mix until well-blended Fold in 6 ounces of cool whip and 14 ounces of blueberry pie filling. Divide be tween two pie crusts. Top pies with circle of cool whip and around edges. Pour 1/2 of remaining blue berries into center. Serve chilled. Makes 2 pies. CLASSIC PECAN PIE (Mary Sullivan - Second Place) 3 large eggs, slightly beaten 1 cup Karo light or dark corn syrup 1 cup sugar 2 tablespoons margarine or butter, melted 1 tsp. vanilla 1 1/2 cups pecans 1 unbaked 9-inch pie crust In large bowl, combine first in gredients until well blended. Stir in pecans. Pour into pie shell. Bake at 350 degrees F. 50 to 55 minutes or until knife inserted halfway be tween center and edge comes out clean. Cool. Serves 8. For frozen crust, preheat oven and cookie sheet. Pour filling into frozen crust and bake on cookie sheet in lower third of oven. CREAM CHEESE POUND CAKE (Mary Sullivan - Second Place) 3 sticks of butter 1 8-ounce package of cream cheese 3 cups sugar 6 eggs 3 cups of Swansdown cake mix flour 1 tsp. vanilla flavoring 1 tsp. lemon flavoring Mix and bake at 325 degrees F. for 1 hour CARROT CAKE (Mary Sullivan - Second Place) 3 cups grated carrots 2 cups sugar 2 cups plain flour 1 1/2 cups Wesson oil 4 eggs 2 tsp. baking soda 1 tsp. salt 1 tsp cinnamon Mix sugar, oil, eggs. Fold in car rots. Bake 3 layers at 350 degrees F. about 45 minutes. ICING 1 stick oleo or butter 1 box powdered sugar 1 8-ounce package cream cheese 1 cup of chopped nuts 1 tsp. vanilla. Mix and spread over cake. The 1993 graduate of Twiggs County Comprehensive High School of Jeffersonville, Ga., joined the Marine Corps in November 1993. The creator of the First Place Winning recipe in this year's contest will receive SI,OOO. The second place recipe will receive $500; and third place will receive S2OO.
