Cook of the Week... Jeff George enjoys cooking for his family and entertaining and cooking for friends By PAULINE LEWIS Staff Writer Jeff George of Perry is the Houston Times-Joumal's Cook of the Week. A native of Waycross, he is a graduate of Waycross High School, attended Georgia Tech, majoring in contracting, and is a graduate of Valdosta State College, majoring in criminal justice. Upon graduation, his first job was with the Georgia Bureau of Investigation. He later accepted a position in sales with Thomaston Mills in Thomaston, Ga. He learned to cook after moving there and it was in Thomaston that he met Kristy, who later became his wife. She was a native of Thomaston who, ironically, had at tended Valdosta State College at the same time Jeff had attended, but they did not know each other. They were married, and since then, have enjoyed cooking and entertain ing. When Jeff is home, he likes to do the cooking and cooks lots of seafood and enjoys fresh produce. Jeff was recruited by Kellwood as merchandising manager over adult bedding, and the family moved to Perry eight years ago (1986), built a home in Lea Glen and lived there until they built their present home on Cedar Ridge. He presently works with Frank Shelton Utility Service Co. head quartered in Perry. The company is responsible for maintenance of steel water towers and tanks. Jeff and Kristy have two daugh ters. Ashley, 18, is a senior at Perry High School and will be at tending Valdosta State University this fall, majoring in Education. She is a member of some clubs and is employed at Trainer Olds/Cadillac in Warner Robins. Keri, 9, is a third grader at Tucker Elementary School. She is begin ning to help with cooking by "stirring the pot" Jeffs hobbies include golf and music. He enjoys playing the pi ano, which he studied for eight years, and sometimes entertains their guests. Kristy is a third grade teacher at Tucker Elementary School and has taught school for more than 20 years. She is also a member of the Akikta Club. The family attends First Baptist Church in Perry. The following are some of Jeffs favorite recipes: OYSTER CASSEROLE 1 pint select oysters 1 pkg frozen spinach with butter sauce Parmesan cheese 1 pkg. Kovera's White Sauce Tabasco Sauce 3-4 strips of cooked bacon Coarse ground black pepper Garlic salt Olive oil Paprika Wash oysters and set aside to drain. Prepare frozen spinach as indicated on package. Drain spinach* and press into glass oven dish. Briefly cook oysters in small amount of olive oil until they firm and become less liquid. Drain oys ters and place on spinach in oven dish. Season with garlic salt, black pepper and Tabasco to taste. Crumble bacon over oysters. Sprinkle Parmesan cheese and pa prika on top. CHIROPRACTIC CENTER 1304 Macon Road • Perry, Georgia • 987-7555 , I^/ -» VvV V| ■ SPAGHETTI SAUCE 1 pound ground chuck 1 pound Lite Sausage (Turkey Pork Blend) 1 can crushed tomatoes (28 oz) 1 can tomato paste (8 oz) 34 cloves fresh garlic 1/2 cup sliced ripe olives 1/2 cup sliced green olives 1/2 cup chopped mild onion 8-10 sliced mushroom caps and stems 1 pkg sliced almonds Tabasco sauce Italian seasoning Salt and pepper Brown ground chuck and sausage until done. Stir frequently to break up larger pieces. Drain and return to cooking pot. Add crushed tomatoes, crushed garlic cloves, chopped onion, mushrooms, Italian seasoning, olives and tomato paste. Season to taste with Tabasco, salt and pepper. Cook at low heat for 1-2 hours. Add sliced almonds before serving. SHRIMP SAUTE’ 1 pound large shrimp olive oil fresh garlic capers cocktail onions salt and pepper Crush several cloves of garlic into olive oil and saute’ to flavor oil. Clean and de-vein shrimp. Place several large spoons of mustard in shrimp and stir to coat. Add seasoning to taste and stir. Cook shrimp on low heat for 10- 15 minutes until all turn pink in color. Stir and cook with lid on pot. Lemon juice may be added to have more liquid. Don't over cook. Most of liquid should come from shrimp. MUSHROOM TOPPING FOR STEAK 1 package of whole caps of mush rooms with stems 1 package of Knorr's Peppercorn Sauce Slice mushrooms and place in cooking pot. Empty Peppercorn Sauce over mushrooms. Add water as specified on sauce mix. Cook at low and remove for 10-15 minutes. Wine may be substituted for part of the water. of garlic. Add 1 teaspoon of capers and several cocktail onions. Salt and pepper to taste. Saute' over medium heat until shrimp turn pink and have desired texture. Cooking time: approximately 5- 10 minutes. Don't over cook. . i A helping hand...
