'Cook of the Week 1 Wanda Sullivan learns 'long-distance' dishes By Pauline Lewie Society Editor Wanda Sullivan, a Perry businesswoman, is the Houston Times-Journal’s "Cook of the Week.” She and her husband, Patrick (Pat) are owners of W.D. Sullivan & Co., at the comer of Jemigan and Carroll Streets. They carry lines of fine gifts and office supplies and have been in business here since June 1992, when they purchased it, then known as Shaheen’s, from the Shaheen family. A native of Bibb County, Wanda and her family moved to Houston County in 1968 and she graduated from Warner Robins High School., completed Macon College coursework in 1978 and University of Georgia coursework in 1984. She completed various employer-sponsored courses in supervisory training, documentation maintenance, U. S. Government Industrial Security and Contract Management. Prior to owning W. D. Sullivan & Co., her work experience included six years in Operations/Payroll of the Finance program in the 2853rd Air Base Group at Robins AF Base and three years as administrative assistant in the Program Office of Litton Systems, Applied Technology Division. For four years she was a supervisor in Tech Support/Administration with Comarco in the Logistics Technology Division. She worked five years in various programs with Logistic Systems Architects, Inc., and a year as an analyst with the Electronic Systems of ARINC Research Corporation Her background experience has evidently fitted her well for operating her business successfully. When asked how she learned to cook, she said, “I learned to cook after marriage and via telephone from the school of “Mom, how do you do it?” “My family still goes to grandmother’s to eat. Patrick likes to grill and is a good cook; my mom taught him how to make biscuits. "His sister is a chef and his mom is a wonderful cook and baker. In fact, most of my recipes have come from her. She is Marjorie (Maij) Sullivan and lives in Downers Groove, 111. She flies down and bakes for us at Christmas. “I was formerly known as the Celebrities will bag for kids' safety On Saturday, September 17, from 10 a.m. until 4 p.m., some of Perrymost well-known celebrities will be bagging groceries at Kroger, in an effort to raise money for Safe Kids of Georgia in Houston County and create awareness about the prevention of childhood injuries. Each year, more children are killed because of injuries that are preventable and costly. Last year in Georgia, over 100 children were killed in motor vehicle and bike crashes. Such injuries and deaths can be prevented with a child safety seat or a bike helmet. “The health and safety of our children is the responsibility of all of us,” said Melanie Elliott, coordinator of Safe Kids of Georgia in Houston County. “This event allows everyone in the community to contribute. Whether you are bagging groceries, learning about safety or buying groceries, you can make a difference in a child’s life.” Funds raised from Safe Kids Day and a donation of a percentage of sales on September 17 from Kroger will be used by the Safe Kids of Georgia in Houston County Coalition to purchase child safety seats, bike helmets, smoke detectors and other pieces of child safety equipment for children in the area who are in need. In addition to the celebrity grocery baggers, Safe Kids Day will feature safely exhibits, drawings for free bike safety helmets and car seats, bike registration, child Wednesday Sept 7,1994 1B “Cheese Cake Lady”: because I made them commercially for restaurants in Macon, Warner Robins and Houston Lake Country Club.” Patrick is accounting manager at Zantop International Airlines at Macon Airport. He and Wanda have a cooking routine: if she cooks, he cleans up the kitchen; if he cooks, she cleans. They have three sons: Sheldon, a 10th grader at Warner Robins High School, is still at home and the older sons are in Colorado. The oldest son, Sean, is at Ft. Collins, doing graduate work (majoring in Finance), and teaching in college. The No. 2 son, Brandan, is in college in the Denver area; in January, he will enter the Denver Police Academy. The following recipes are some of Wanda’s favorites. Since she is a working woman, she likes things that she can prepare ahead. Bon Appetit! IRISH STEW 1 cup burgundy or other dry red wine 1 clove garlic, minced 2 bay leaves 1 teaspoon salt 12 teaspoon freshly ground pepper 1/4 teaspoon dried whole thyme 3 pounds lean beef for stewing, cut into 1-inch cubes 1/4 cup olive oil 2 (10-1/2 ounce) cans condensed beef broth, undiluted 6 carrots, cut into 2-inch slices 12 small boiling onions 6 medium potatoes, peeled and halved Combine first 6 ingredients; pour over beef in a shallow dish. Cover and refrigerate 8 hours. Drain meat, reserving marinade, discard bay leaves. Heat oil in a Dutch oven over medium heat; brown beef in oil. Add broth and reserved marinade; bring to a boil. Cover, reduce head, and simmer 1 1/2 hours. Add carrots, onions, and potatoes; cover and cook 30 minutes. Yield: 2 1/2 quarts. Melt butter in 3-quart pan. Saute’ onion, garlic and mushroom until tender. Stir in flour until blended. Stir in chicken broth until smooth. Stir in half-and-half. Heat to boiling, stirring constantly. Boil 1 minute (stir). Stir in jack cheese and heat until melted. Season with salt and pepper, add pasta and chicken. Combine Parmesan cheese and bread crumbs, sprinkle over casserole. Bake at 350 degrees F. for 30-45 minutes. Makes 6 servings. CHOCOLATE POUND CAKE 1/2 cup shortening (butter flavor Crisco) 1 cup margarine, softened 3 cups sugar between Kroger, Safe Kids of Georgia, Safe Kids of Georgia in Houston County, the Kiwanis Club, MIDAS Muffler Shops, Primcrica Agents, the office of the Lieutenant Governor and the Miss Georgia Pageant. Wanda Sullivan 5 eggs 3 cups all-purpose flour 1/2 teaspoon baking powder 1/2 teaspoon salt 1/2 cup cocoa 11/4 cups milk 1 teaspoon vanilla extract Creamy Chocolate Glaze chopped pecans Cream shortening and margarine; gradually add sugar, beating until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine flour, baking powder, salt, and cocoa; mix well. Add to creamed mixture alternately with milk, beginning and ending with flour mixture. Stir in vanilla extract. Pour batter into a greased and floured 10-inch tube pan; bake at 350 degrees F. for one (1) hour and fifteen (15) minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10 to (See Sullivan, page 2B) Fair needs your help The Georgia National Faircrackers will meet Monday, September 12, to plan their program for the fifth annual, state sponsored Georgia National Fair, October 7-16, and their activities throughout the year. The Faircrackers are a special group of volunteers dedicated to support the Georgia National Fairgrounds & Agricenter The meeting will be held at 7 p.m. in the Fairview Room of the Reaves Arena at the Fairgrounds. All current volunteers and anyone wishing to join are encouraged to attend. “The Faircrackers are very special to us and their importance can’t be overstated,” said Michael A. Froehlich, executive director of the Georgia National Fairgrounds & Agricenter. “This is the fifth anniversary of the Georgia National Fair and it will be a fantastic celebration as the volunteers help us to enhance each fairgoer’s visit to the Fair,” Froehlich said. Faircrackers assist the Agricenter staff with all aspects of the Fair, including the information booth at the Clock Tower, greeting Fairgoers and school field trips, backstage at Reaves Arena, administration area, Georgia Living Center, Heritage Hall, McGill Marketplace, all of the bams, and all over the Fairgrounds.
