Tofu care: Check the expira
tion date. Change the water as
soon as you get home. Use dis
tilled water (not tap) to rinse and
soak the tofu each day. For firmer
tofu, wrap in paper towels to
absorb the water and place a
heavy object on it to further
squeeze the moisture out before
cooking. Tofu lasts from 7 to 10
days. I don’t eat tofu itself unless
Top Wok fixes it for me but I do
eat foods made of tofu and soy
beans.
As the Nutritionist at Kroger, I
invite you to check out the
plethora of non-dairy alternative
soy/tofu foods available such as
tofu sour cream, soy burgers,
enchiladas, lasagna, burritos, lun
cheon meats, wieners, and non
dairy cheeses. Try enriched soy
milk in vanilla or plain flavors. I
eat sandwiches made of whole
wheat bread spread with Tofutti
herb/garlic cream cheese. Then I
pile three slices of Galaxy tofu
(read: soy) American cheese on
this concoction plus three slices of
soy Canadian bacon. If you put
these sandwiches side-by-side
with a regular cheese and lun
cheon meat, you would probably
not know the difference in taste,
smell and texture. Loaded with
usable calcium, protein and other
healthy nutrients, this sandwich is
my favorite. Wash it all down
with a lunch box size (8 oz) box of
chilled Westsoy Plus vanilla soy
milk and my Recommended

If you suffer from
heart or vascular
disease...
... there is a safe, painless,
affordable treatment that can
relieve your symptoms. It’s
chelation therapy.
Chelation (key-lay-shun)
is an intravenous treatment
that has been shown to
relieve the symptoms asso
ciated with vascular disease.
With aging comes
decreased blood flow to all
the organs, reducing the
ability of one or more
organs to function properly.
And creating pain.
Intravaneous chelation
therapy often improves this
lost blood flow. It revitalizes
these organs. And relieves
the pain.
The benefits are usually
