With the arrival of spring
also comes the end of anoth
er school year. Many chil
dren and parents long to
thank the teachers who
have made such a wonderful
impact in their lives.

Guacamole Autentico
Here’s the real deal. The
folks at the California
Avocado Council call it “ a
guacamole recipe so authen
tic, you can almost hear the
Mariachis singing.”
4 ripe avocados,
peeled, seeded
1 teaspoon ground
cumin
1 ripe, medium Roma
tomato, seeded, diced
1/2 cup minced sweet
white onion
2 serrano chilies, seed

in 2-inch chunks (about

2-inch pieces
1 pound shelled and
deveined shrimp and/or
scallops
8 thin slices lemon
Preheat oven to 450°F or
heat outdoor grill. In a large
bowl, combine oil, garlic,
thyme and salt. Add zucchi
ni, corn and shellfish; toss.
On each of four 14 x 18-inch
sheets of heavy-duty foil,
place a quarter of the sweet
com mixture in the center.
Top with lemon slices. Draw
together longer edges of foil
and crimp, leaving room for
steam to circulate; seal foil
ends (or, divide mixture
evenly among four ready-to
use single-portion foil

Cut avocado in large
chunks and mash coarsely in
large bowl with a fork. Add
remaining ingredients and
blend gently - leaving some
small chunks is fine. Taste
and adjust seasoning with
more pepper sauce, salt and
pepper if desired.

You probably don’t even
need a recipe, because this is
a variation on the classic
BLT, with avocado instead of
lettuce. The recipe makes
two and comes from the
Calif. Avocado Council, but
we’ve amended it to use
Vidalia onion rather than

Preheat grill or broiler.
Place celery and fennel in a

To prepare Buffalo Corn
Ears: In a small saucepan,
melt butter with hot sauces.
Remove from heat and add
lemon juice. Brush corn
with seasoned butter mix
ture. On a rack, arrange
corn; grill or broil until
slightly charred, 8 to 10
minutes, turning ears and
basting with remaining but
ter mixture. To serve: Drain
celery and fennel. On 4 din
ner plates place celery, fen
nel and Buffalo Corn Ears,
dividing equally. Top corn
with Blue Cheese Slather.
Use remaining slather as a
dip for the celery and fennel.
Serve with grilled or. fried
chicken or fish, if desired.
Blue Cheese Slather:
In a small bowl, combine
1/4 cup crumbled blue
cheese (2 ounces), 1/4
cup softened cream
cheese, 1 tablespoons
half and half and 1/4 tea
spoon celery salt. Mash
with a fork until fairly
smooth. Yield: about 1/2
cup.

In a mixing bowl add the
salts, coloring, oils and bak
ing soda. Mix well until the
color and scent have been
evenly distributed through
out the salts and baking
soda.
Now add the salts to the
bag and tie it off with a col

On a small card you can

Bath along with the instruc
tions to empty the contents
of the bag into one pan of
warm water, add feet and
enjoy.
In larger batches it can
also be used as a relaxing
bath soak.
It is fun to create combi
nations such as red food col
oring (which will turn out
pink) with a rose scent, or a
few green drops added with
peppermint oil. The possibil
ities are endless. Try to find

Before cooking prepare
avocado, lettuce and tomato
slices. Sprinkle avocado with
lemon juice so it won’t dis
color.
Keep refrigerated until
burger and egg are cooked.
Spray grill or frying pan
with “pam” type spray.
Cook ground beef patty
(burger) to preferred color
