EGGS.
It is a popular notion that any one
can toil an egg, whereas not one cook
in ten has the happy instinct to know
the exact instant when the white of a
boiled egg has become a quivering jelly
instead of a tough mass of indigestible
albumen, and when the yelk is in that
semi-fluid stage which is the "just
right" stage for a boiled egg. You can
not rely on inflexible rules, since hens
will not lay by rule.
Deviled Eggs.?Cook half a dozen eggs
hard by putting them on in cold- water
and, when this reaches the boiling point,
stand where it will fall just below it for
twenty minutes. Throw into cold water
tor half an hour to prevent turning
black, take off the shells and cut in
halves lengthwise, remove the yelks and
mash to a smooth paste with a desertspoonful
of anchovy sauce, and salt and

this mixture and serve with a cream
sauce; garnish with minced parsley.
Finely minced ham, chicken or game
may be used Instead of the anchovy
sauce, working this with the egg yelks
to a smooth paste, with a teaspoonful
of olive oil, half as much French mustard,
and salt and cayenne to taste.
Baked or Shirred Eggs.?You may also
call these "sur le plat" at times, and
play you have a new dish, but the process
is the same, and it is one of the
best ways of cooking eggs. Butter a flat
earthern baking-dish capable of holding
just as many eggs as you require, and
no more; they should lie closely, and
still without crowding; season with salt
and pepper, and dot with bits of butter
ana piace in tne oven till the whites set,
but remember that the cooking continues
after the dish is taken from the
oven. The dishes lined with white porcelain
can be sent to the table. Done in
the little individual dishes that come for
the purpose, they are especially dainty.
For a lunch course they may have added,
after they are taken from the oven, a
spoonful of French peas that have been
made hot with butter and seaspnings, or
a spoonful of minced mushrooms in a
thick sauce. They are extremely pretty
and appetizing if baked in tomatoes,
from which the seeds and pulp have
been removed, or In green peppers that
have been likewise treated.
Steamed Eggs.?Are a dish for delicate
palates. Break the requisite number of
eggs into a flat dish and set over boiling
water, covering the dish closely; keep
the water boiling, and when the eggs are
cooked to taste, season lightly and lay
each one upon a thin rasher of broiled
ham.
