Family feasts start with pasta
Special to the Journal
Pasta is a busy cook’s best
friend. Unlike potatoes, it
doesn’t take peeling. Unlike
rice, you don’t have to watch
the pot to make sure just
the right amount of water is
absorbed.
But, even more important,
kids like it, and it’s a good
starting point for dozens of
family-style casseroles.
Here are a few from the
National Pasta Council to
add to your collection
Cheeseburger
Noodles
Serves 6
8 oz. Medium or Wide
Egg Noodles, uncooked
1 pound extra lean
ground beef
1/4 cup dry bread
crumbs
1/2 tsp. onion powder
1/2 tsp. salt, divided
1 egg 2 tsp. vegetable
oil
1 14 1/2-oz. can fat-free
chicken broth
1/4 cup water
1/4 cup ketchup
1/2 cup non-fat sour
cream
1 cup shredded low-fat
Cheddar cheese
Combine ground beef,
breadcrumbs, onion powder,
1/4 tsp. salt and egg; mix well.
Shape into approximately 36
3/4-inch meatballs. Heat oil
in a large skillet coated with
cooking spray.
Add meatballs and cook
until browned on all sides.
Drain well.
Combine chicken broth,
water, ketchup and remain
ing 1/4 teaspoon salt; add to
skillet.
Bring to a boil; stir in noo
dles, making sure it is cov
ered by the liquid. Reduce
heat, cover, and simmer 10
to 15 minutes or until noo
dles are done.
Stir in sour cream and
cheese.
Cook until thoroughly
heated and mixture thick
ens, about 5 minutes. (Do
not boil.)

Cheesy Baked
Ziti
Serves 8
1 pound Ziti, Rigatoni,
Mostaccioli or other
medium pasta shape,
uncooked
Vegetable oil cooking
spray
1 onion, chopped (about
1 cup)
2 garlic cloves, minced
1 14.5-oz. can low
sodium diced tomatoes,
drained
1 15-oz. container low
fat ricotta cheese
2 cups shredded low-fat
mozzarella cheese
1/4 cup grated Parmesan
cheese
1/2 cup skim milk
1/3 cup chopped Italian
parsley
1/3 cup chopped fresh
basil (or 1 tbsp. dried)
1/2 tsp. black pepper
1/4 tsp. salt
Prepare pasta according
to package directions. Drain
and set aside in large bowl.
Preheat the oven to 400°
F.
Spray a non-stick skillet
with vegetable oil cooking
spray. Heat oil over medium
heat.
Add onions and saute until
tender, about 5 minutes. Add
garlic and saute 1 more min
ute. Remove from heat. Stir
in tomatoes.
Place ricotta cheese,
1 1/2 cups of the mozza
rella cheese, 2 tbsp. of the
Parmesan cheese and milk
in a food processor or blend
er. Process until smooth.
Add the tomato and cheese
mixtures, parsley, basil and
pepper to the cooked pasta.
Toss well to combine.
Spray a 2 1/2 to 3 quart
(an 8 or 9 x 12-inch oblong
dish works well) baking dish
with vegetable spray. Spoon
the pasta mixture into the
dish.
Sprinkle with remaining
1/2 cup mozzarella and 2
tbsp. Parmesan cheeses.
Bake at 400° F for 20
minutes, or until lightly
browned.

Rotini with Pork
and Broccoli
Serves 4 to 6
1 pound Rotini, Twists,
or Spirals, uncooked
10 oz. very lean pork,
trimmed
1 tbsp. vegetable or
peanut oil
1 medium onion,
peeled, cut in half and
sliced thin
2 tsp. finely chopped
garlic
2 cups broccoli florets,
cut into small pieces
2 cups carrots, sliced
1/4 cup reduced-sodium
soy sauce
1 1/2 tsp. molasses or
honey
2 tbsp. dry roasted pea
nuts, unsalted
1/4 cup water
Prepare pasta according
to package directions; drain
and set aside. Cut the pork
into 1/2-inch strips and set
aside.
Heat oil in a large skil
let over medium high heat.
Saute pork until well done,
remove and set aside. Add
onion and garlic and stir
until onion is wilted and
lightly browned, about 4
minutes. Add broccoli, car
rots and pork, saute until
vegetables are crisp and ten
der, about one to two min
utes. Combine soy sauce,
molasses and water and add
to skillet. Heat to boiling.
Add pasta to the pork
broccoli mixture and stir
until pasta is well mixed.
Serve immediately. Garnish
with chopped peanuts.
Orzo with
Cranberries and
Sausage
Serves 8
12-oz.of orzo, acine
de pepe, or ditalini,
uncooked
1/2 lb mild sausage
links
1 small onion chopped
3 1/2 cups low-sodium
chicken broth
