Pumpkins Can Be Fun
Did you realize that pump
kin is loaded with vitamin A
and it is a dieter’s delight?
There are only 38 calories
in' s cup of cooked pumpkin.
This squash is first
thought of as pie, then as
soup, and next as a vegeta
ble. It may be substituted in
any recipe calling for winter
squash. About % pound will
serve one person.
At Halloween time, pump
kins are welcome as sym
bols of harvest and shivery
fun. For decorations, allow
each child to carve his own
small pumpkin. Then stack
them into a totem pole. Use
the topmost cut out as a lid,
the remainder for ears and
noses. Stems make good fea
tures, too. Different facial
expressions provide added
interest.
To cook: wash and cut it in
half crosswise. Remove
seeds and strings. Place it in
a pan, shell side up, and
bake it in a 325 degree oven
for one hour or more, de
pending on size, until it is
tender and begins to fall
apart. Scrape the pulp from
the shell and put it through a
strainer or ricer. Now it’s re
ady to use in your favorite
recipe.
Pumpkin Soup
Place three cups canned
or two pounds cooked fresh
pumpkin in three cups
scalded milk.

one tablespoon sugar or two
tablespoons brown sugar,
salt and pepper, (nutmeg
and cinnamon), a very small
pinch saffron, Vt cup finely
julienned ham.
Heat, but do not boil.
Serve at once.
Spicy Pumpkin Chiffon Pie
One cup sugar. Three
eggs, separated. One and V «
cups fresh or canned pump
kin. Vi cup milk. V 2 tsp. milk
M> tsp. ginger. Vi tsp. nut
meg. V 2 envelope of gelatin,
cup cold water. One baked
pie shell.
Add V* cup sugar to
slightly beaten egg yolks in
top of double boiler; stir in
pumpkin, milk, salt and
spices. Cook, stirring con
stantly, until thick. Soften
gelatin in cold water; add to
hot pumpkin mixture and
mix thoroughly. Chill until
thickened; add remaining
sugar. Fold in stiffly beaten
egg whites. Pour into pie
shell. Chill until firm. Garn
ish with whipped cream just
before serving, if desired.
May use gingersnap or gra
ham cracker crust.
Toasted Pumpkin Seeds
Separate the fiber from
the pumpkin seeds. Cover
the seeds with salted water
and simmer for two hours.
Drain and dry on brown pa
per. Then spread the seeds
in a shallow pan. Cover with
cooking oil, and a little salt.
Bake in a 250 degree oven
until golden brown. Stir
from time to time.

Success For Coupon Clubs

In my last column, I dis
cussed the benefit of starting
a coupon club and described
what goes on at a typical
meeting. For readers who
decide to start clubs of their
own, here are some tips to
help to make them success
ful:
Consider charging dues
at each meeting. The club I
belong to charges sl. This
money takes care of the
club’s incidental expenses
and provides for a special
event or dinner each spring.
Elect officers to keep
things running smoothly.
Use committees to do as
much of the work as possi
ble.
For instance, a purchasing
committee can investigate
making case-lot purchases
as a group and ask mer
chants to offer club mem
bers special discounts. An
educational committee can
provide speakers for schools
and groups that want to
learn about couponing and
refunding.
Every club members
wants to bring along a friend
or two, but too many people
at a meeting create chaos.
Make firm rules for bringing
guests and admitting new
members.
When you have begin
ners at a meeting, take them
aside at the start of the trad
ing session for a special
class in organized couponing
and refunding. '
Use some of your knowl
edge or refunds to benefit
the community or those less
fortunate than you. This
gives a special meaning to
your couponing and refund
ing.
lnsist on fairness in ev
erything done by the club
and those in it. Members
should treat other members
especially beginners as
they themselves would like
to be treated. This golden
rule should be extended to
dealings with merchants and
manufacturers.
Make contact with other
clubs in nearby towns and
