rind of a smnll lemon ; bent tho whites
of three eggs, whisk nil tho ingredients
together to a flue froth, and pile on a
glass dish. A little sponge cake soaked
in fruit svmp nnd laid on tho bottom of
the disli is an improvement.
CiiAnr.oTTR ltussK. --Line a plain mold
with sponge onko out to lit oxoctly, brush
over tho inside, very lightly, with the
white of an egg, and lint it upon ice.
Heat up one pint of rich cream with one
ounce of isinglass (previously dissolved
in sufficient water to cover it). Bwccton
nml flavor to suit tho taste. Pour this
into the mold, cover it with a pel00^of
sponge enko cut exactly tho six*
it, ami turn it out very carefully.
loanGakk.—Mix thoroughly ono half
pound of flour, ono-half pound ground
non, currants, one-quarter pound sugar,
one quarter ounce mace and cloves,
somo mixed peel, a few bitter almonds
pounded, some sweet almonds split,
om* teaspoon fill of e irbonitc of soda,
melt one-half )>ound fresh butter in pint
of worm milk, and tho yelks aud whites
of four eggs beaten separately ; pnt this
by dogioes on tho dry ingredients, boat
well; put into a buttered mold, nud
bake.

a Rtownnu with two ounces of sugar, a
pint lit milk, aud half a pint of orusm
let it boil until a third of it in oon
nuuied, nud when lulf cold bent up tho
yelks of six egg* with it ; strain the

tho small cups or dishes in which tho
cream is to bo suv. d into n pan
tabling enough boiling water to i
above half way up tho cream. Cover
the mm, and lay tiro on tho lid ; boil it
till (lone, aud servo cold.
Ox logs (to Pickuh).— Ohooso small
button onions ; as they nro peeled throw
them into milk and water, drain thorn
from this when thef nro nil done, out
them into a jar nml pour n strong brine
of snlt and water ami a small piece of
alum (boiling hot) over them, i
close, and set them aside till the
day ; drain aud dry on a doth, put
them into cold distilled vinegar with a
few blades of bruised ginger, some
whole pepper and a little macn, keep
always covered with vinegar, cork the
jar alOMO, nnd put in a dry, cold place.
Hkmkov rou Group.— Hpirits of tur
pentine is a sovereign remedy for croup.
Maturate a piece of flannel with it, ami
plnco it on the throat aud chest, ami
noml for your family physician. If the
case be very urgent, nnd tho child in
great distress, and the distance to tho
duetor's residence very groat, drop three
drops of thn turpentine on n lump of
sugar ami give it internally. Or a good
onretio of blood-root, or lobelia, or noth
oombinrd, should be given,
family should keen a bottle of spirits of
turpentine in tho nottso.
Tun bloom, or glaze, or facing of
green nml black tea is generally urti
floi.il. In tho case of green ten it is or
dinarily u mixture of 1'russiau blue,
tumeric, nud sulphate of mime, or China
clay ; and in that of blank tea it iH nnf
(infrequently n coating of black lend.
The tea prepared for tho English mar
kot is notoriously subject- to those adul
terations ; and it sooiiH tlmt thin a tines
entirely trmn our own fancy, and not
from any desire on the part of the
Ghiuujo to pursue suoh a practice. Tho
adulternliou is easily discovered by
treating tho tea with oohl water, nud
then straining through muslin, nml ul
lowing tho lino powder to subside.
To PnitsKiivu Milk.—Provide bottles,
which must bo perfectly clean, sweet
and dry. Put the milk warm from tho
cow into these bottles, and, as they
tilled, immediately cork them up and
fasten tin* ojrk with who. Then spread
a little straw on tho bottom of a boiler,
on which place the bottles, witli straw
between them. Fill it up with cold
water. licit the water, and as soon us
it begins to boil draw the fire and lot
tho whole gradually cool. When quite
cool take out tho bottles, paok thorn
away in sawdust and put them m a cool
place, hut where the milk will not
freeze. Milk preserved in this way will
keep perfectly sweet for years,
