North Carolina ; 11, Maryland; I, Ken
tucky ; 5, Mississippi; fl, Connecticut;
7, Massachusetts, ole. The analysis of
tobacco shows it to he a narcotic poison.
No other plant is like it in conqionition.
In a small quantity it is u stimulant, in
largo quantities a deadly poison. It is
a rapid grower, and draws from Din
soil more than any other plant. Clover
takes from the mineral dement of the
soil ton per oent., tobacco twenty per
cent, or one ton of tobacco exhausts
100 pounds of mineral suhitan
every acre. The Connecticut seed-leaf
tobacco lias a peculiarity, in contradis
tinction to any other in its fineness and
thinness of leaf and texture, and light
ness of color. Tobacco is mado by its
soil. It cannot ho heavy clay, Loavy
loam or alluvial soil. Must ho line,
sandy land, having absorbent power,
and retaining heat through tbo night.
Taking this poor soil a lurge quantity
of manure must be used. Tlio Jaud is
the machinn for raising tobacco, and it
must ho fertilized and not allowed to
deteriorate a particle. Tobacco i
exhaustive that no farmer or farm
make it au exclusive crop. Work must
he fed for the manure, and the streams
of grain which flow in from tlio west are
to he taken advantage of.

raising was managed on business \

ter a dozen Hpitzenberg apples, and
stew them gently, with a Clip of water,
white sugar suffiriont to sweeten, and a
littlo cinnamon ; when reduced nearly

soft custard of a quart of milk, tlio
yelks of four eggs, a littlo sugar, and
extract of lemon. When it is cold, lay
it over the apples, and whip up the
whites of Dio eggs with a quarter of a
pound of powdered sugar, and heap
lightly on tho top.
FnBNRif Coffee.— French coflbo is
much talked of and the general suppo
sition is that Die peculiar French quali
ty is in sorno filtering process, or in the
way tho element is extracted from the
berry. But any intelligent housewife
knows how to extract the element from
the berry, without any peculiar appa
ratus. Unless she sows if up as th*
French do, she will have nothing that
will nppeur like French coffee. The
French make their coffee so strong that
one part of liquor requires the addition
of two parts to reduce it to Dio proper
strength. Thin addition is made with
hot milk. This large proportion of hot
milk, in the place of an much warm
water, gives the coffee a richness like
unto that mado by tlio addition of cream
in the ordinary wav. By this means
hotels, and any body that will go to
Dio expense of buying good milk, can
have good ooffoo without cream.
Hick Cares.—To one toaonpful of
cold boiled rice put one of flotfr, one
egg, one table spoonful of oorn-stnPcli,
teaspoonful of salt, and sour milk or
buttermilk enough to make a hatter ;
mix smoothly, and nt tho last add « toa-
sp-.ionful of nod a nirl a little melted
butter; hake immediately. If sweet
milk Is used put in rather less soda and
double the quantity of cream «f tar
tar. Cold boiled hominy can ho used
in tho same way. These are an ox-
oollout substitute for hnokwhoat cskes.

Venetian Rrlics fuom Mexico.—
Among tlio beautiful articles recently
brought from Mexico are two rich Ve
netian mirrors, which have been pre
sented to a lady iu this city. The mir
rors themselves were originally brought
to Mexico by noaio of the old Spanish
gruudeot*, and are estimated to be some
hundred and fifty year* old. They were
at one time in the jioBBoaaion of Maxi-
millinu, and were bought in at the sale
of tlmt unfortunate monarch’s effects.
Tlio glass mirror* are each about two
foot long and one wide, auil arc, appar
ently, similar to the French plate glass
of to-day. The panes of the mirrors
are o imposed of piece* of glass out in
tho form of grape leaves artistically aud
perfectly joined together. On these
leaves are fashioned branches of grapes
beautifully out in intaclio so as to ap
pear in lias-relief. The work upon
these mirrors evidentlyoouBumcnlmuch
time and great labor in the execution.

milk, add sufficient flour to make it tlio 1

cover over, and keep warm. When it
has risen to its utmost height, add a
quarter of a pint of warm water uud
half au ounce of salt ; mix all together.
Rub into it a lit tie Hour, two ounces of
butter, then make tho dough not quite
so stiffas for bread ; let it Htsiul three-
quarters of an hour, when it will l>o
ready to form into roils ; then let them
stand until they have risen, and bake
in a quick oven.
Muffinh.— Strain into n pan a pint of
warm milk and a quarter of a pint of
thick yeast, add saffioiont flour to make
it into u batter; cover it over, and let
it stand in a warm place until it has
risen ; add a quarter of a pint of warm
milk aud an ounce of luiltcr rubbed iu
some flour quite fine ; mix them well to
gether, thru add Hiiffioioat dour to make
tt into dough; oovt r it over, and let it
stand for half an hour; then work it up
again, and break it into small pieces,
roll them for a quarter of au hour.
Next begin baking ; when laid ou tho
watoh them carefully, and wheu
