Question. —Why is it that sometimes
in churning foam will rise in tho churn
and it will take hours for the butter to
"come?”
A.nkwf.u.—One of the best authorities
on the subject gives the following rea
sons for the condition you mention:
1. The temperature is pot right—us
ually the cream is too cold in the churn.
2. The cream may havo been kept too
long.
3. The cream of a “farrow” or “strip
per” cow mav bo causing the trouble.
4. The cream may be too thin—gtA
rid of some of the skim-milk.
6. Tho croam may be too thick—add a
little skim-milk or water.
G. Tho churn is too full.
To make good butter tho cream when
churned should havo a temperature of
between 55 and 75 degrees. If the tem
perature is below 55 degrees the butter
will not “come” readily, and if above 75
degreos the product is apt to boa white,
spongy butter. Overcliurning is also
to bo guarded against, and cars must be
taken to stop the churning at the point
where tho butter separates itself from
tho milk. Otherwise tho granular ap>-
poarauco and character of tho bnttef
will be lost, and yon will have a smooth,i
