condition of their teeth. In the case of
bakers, the caries is soft and rapidly pro
gressive; the principal parts attacked
are in the labial and buccal surfaces of
the teeth. Prof. Hesse believes that the
disease is owing to the inhalation of flour
dust, the caries being caused by the ac
tion of an acid which is formed in the
presence of fermentable carbohydrates.
