Medical College, W. P. Mason, of the
Rensselaer Polyteohnio Institute, of Troy,
demists of the highest standing and repu
tation well known for their extended and
rateable services as pnblio analysts.
Messrs. Tucker and Mason, the Jonrnal
,,,ted bad been direoted to procure from
Healers in Albany and Troy packages of
baking powder, to analyze and critically
examine them, and to make their reports of
(acts found entirely without bias or favor.
The report proved a matter of interest
snil importance, and was widely copied and
commented npon. From the facts pre
sented housekeepers had no difficulty in
determining for themselves the best and
most wholesome baking powder to use.
The Journal, its facts having been ques
tioned by n local baking powder manm
(acturer, returns to the suhjeot and pub'
lishes the following interesting interview
with Prof. Tucker. The facts before stated
arc reaffirmed and emphasized iu the most
breezy manner:
A Jonrnal reporter rooently visited Prof,
Tusker tor tbs purpose of gaining fnrthc:
iufarmation in leference to the baking
powder question. Ho was found in the
sltensive laboratory of the Medical College,
hard at work, but good-naturedly sub-
fitted to an inquisitorial interview, the
,abject of which, nero given, will be found
of interest.
“Doctor," aaid the reporter, “it appears
that one of onr local baking powder manu
facturers attempts to discredit the report
tome time ago published iu the Journal
with reference to baking powders, for
which the analytical examinations were
made by yonrseif and Professor Mason.
Were yonr analysis and opinion printed
correctly?”
“They were," replied Profossor Tucker,
literally."
"Is there any part of the report, or of
year views expressed therein, that you
would modify?"
“Not a word. My examination was most
carefaiiy and accurately made: the deduc
tions 1 drew from the tests were the inevit-
shlo ones, and the opinions I expressed were
unquestionably correct.”
"You say, Doctor, that the Royal baking
powder is superior to any other baking
pjwder which you have examined?"
Teat is my report."
Have you examined many other baking
powders?"
Quito a number.”
Wherein, Doctor, consists this superior,
fay which you dud in the Royal over other
biuuds?’’
“As stated in my report, in the great pur
ity ot its ingredients, in the unquestioned
propriety and wholesomentss ot those in
gredients, in the exact proportions of the
uaic, and the chemical accuracy and skill
with which they have been combined. As
1 said before, it is, I believe, a bakiug pow
der ‘udequaled for purity, strength and
iholoBomaness.’ ”
“Dootor, the Journal’s lady readers would
like you to inform them what sro the pecu
liar virtnes of a good baking powder over
other and more uid-fashioned methods of
raising bread, biscuit and cake?”
“That would require a long anawer,
northing in the nature of a lecture. Briefly,
however, the advantage of such a baking
powder over yeaat consists in the qnicktr
work it accomplishes, in ihe preservation
o! soma of the best elements of the ttunr,
which are destroyed in the production of
the c .ibonio aoid gas by the use ot yeast,
sad in tho absolute oertainty of awcet, light
sad digestible food. Over other methods
tor quick rising, the merits of a pure
ukiag powder are . great. It is al ways
ready for use, the aoid and alkali are com
bined in exact proportions to produce
definite results, or to render the largest
amount of leavening gas and leave nothing
more than a natural residuum, whioh is not
the result where cream of tartar and soda
tie bought separately and mixed in the
kitchen, lor it will always occur where this
is done that one or the other of these sub-

yellow, heavy, hitter and unwholesome.
Besides, the cream of tutor which con be
procured by the housekeeper is mostly
adulterated, adding to the uncertainty of
the reunite or the nnwhoteaomeness ot the
food. All those difficulties arc avoided in
the nso of a pure, properly-made baking
powder."
"Will baking powders keep? How long
will they hold their strength?”
"If properly made, unt'l used. A per
fect baking powder must combine superla
tive strength with powtr to retain it in
definitely. Baking powders generally are
lobbed of the necessary preservingagent in
•nier to give present strength, or else have
their efficiency largely deitroyed by the ad-
diuou of large quantities of flour to pre
vent premature decomposition. The meth
od by which both these qualities are re-
niued in the highest degree

pemocratof to-morrow will contain the

largely interested in railroads and in mines.

those two gentlemen, our host and my

in details of what was in process now und
preparation for the future, and I gained
moss of valuable and interesting
information from them that I could not
have obtained from books. With such a
party and with such subjects for
discussion it is hardly reasonable
there would be extr tordioary hilarity.
Wine was drunk, but iu moderation, end
at the end of the breakfast I went to the
legation and remained until 4:30 p.

breakfast.
It was telegraphed from here some time
after this, when 1 don’t know, that I had

the trial. Thi" morning Chambers stnet

thronged with hundreds of people. Admis
sion was free to oU and the large court
rjom in Part 2 was densely packed. Tbe
other boodlers were conspicuous by their
absence. McQnade was escorted into tho
court room by Under Bberiff Sexton and
Order of Arrest Clerk Marline. There
wasn’t the hail fellow appearance about
McQnade that characterized him on Friday.
He took his old seat and very quietly waited
for an hour for his sentence. At 11 n.

on the bench. After the proceedings
of lest Friday worn real, General Tracy, of
counsel for the defense, moved for an ar
rest of sentence on the gronnil of iusuffl.

trial was suspended December 14 for the
bringing iu of N-sbilt and Viokermatt, who
signed certain affidavits before and in the
presence of the jury. He also moved that
the verdict be set aside, on the grounds that
the court bad admitted improper evidence
against the dofendent and excluded other
proper evidence in hia favor.
The motions were denied, General Tracy
taking exceptions.
McQnade was ordered to stand np, and
did so with his thumbs iu his pantaloon
