The Cook’s Nook

A buffet supper is a delightful, in
formal and effortless dinner party that
can be given easily without extra help.
The food is placed on a table or buffet.
Plates, silver and napkins rae arrang
ed conveniently so that your guests
may serve themselves. They may take
their plates to smaller tables set up
nearby, or in an adjoining room. Des
sert may be served by the hostess or
a friend and passed to the guests, or
it may be set out with the coffee on
another table, or placed on the clear
ed buffet table, where each guest
serves himself.
Hamburger Stroganoff is a grand
main dish for a buffet supper. It may
be served with toasted french bread,
a vegetable and salad. Serve your fa
vorite dessert with your supper.
When unexpected guests drop in
here is a quickie to serve, Dried Beef
Rarebit.
And last but not least, is a recipe
for Blueberry Muffins. This is a favor
ite of many people I know, I think
I shall try Blackberry Muffins, sub
stituting blackberries for the blueber
ries. What do you think?
Hamburger Stroganoff
V 2 cup minced onion
1 clove garlic, minced (optional)
Vi cup butter or margarine
1 pound ground beef
2 tablespoons flour
2 teaspoon salt
Dash pepper
1 (8-ounce) can mushrooms, drain
ed and sliced
1 can cream of chick
en soup, undiluted
1 cup commercial sour cream
Dash of parsley
Saute onion and garlic in butter
over medium heat. Stir in meat and

Out Against Rate Increase

buys from the Georgia Power
Company Division of The
Southern Company could cost
Flint members as much as
$600,000 or more a year,’’
stated B. L. McDaniel, presi
dent of the Board of the 24,000
member electric cooperative,
headquartered in Reynolds,
Ga. Mr. McDaniel’s statement
followed a meeting of the
Flint Board of directors in
which the recently announced
rate increase proposal was
discussed.
“Statements in the press
relating to an increase of
“only a quarter cent per
KWH’’, or about “$1.50 per
month for the ‘average’ cus
tomer” are somewhat mislead
ing,” he said, “since our
members average using more

mushrooms. Cook 5 minutes. Stir in
soup. Simmer uncovered 10 minutes.
Stir in sour cream. Heat through. Gar
nish with parsley. Serves 4 to 6.
Dried Beef Rarebit
1 can or jar (4-ounce) dried beef,
shredded
Vi cup butter or margarine
Vi cup flour
1 teaspon dry mustard
V 2 teaspoon paprika
2 cups milk
1 cup grated sharp Cheddar cheese
If dried beef is very salty, cover
with water and bring to a boil. Drain.
Saute beef in butter until edges curl.
Blend in dry ingredients. Cook over
medium heat, stirring until mixture
is smooth and bubbly. Remove from
heat; stir in milk. Bring to a boil, stir
ring constantly, boil 1 minute. Remove
from heat, blend in cheese and stir
until melted into sauce. Serve over
toast. Serves 4.
Blueberry Muffins
Cream Vi cup butter or margarine
with Vi cup sugar. Add 1 well-beaten
egg and mix. Do not beat. Beating is
futile and fatal. Sift 2 cups flour. Take
2 tablespoons of flour and mix with
IV2 cups blueberries. Sift the rest of
the flour with 3 teaspoons baking pow
der and Vi teaspoon salt. Measure 1
cup milk. Add the dry ingredients al
ternately with the milk. Don’t beat!
(Warning against the down beat.) Stir.

berries and fold in the batter. (The
batter won’t look smooth, this is all
right. They will be “smooth” going
down.) Fill greased muffin pans two
thirds full. Bake in hot oven, 400 de
grees F. for 25 to 30 minutes. Serve
hot, with butter if desired. Good!

actually a 37% increase in
the amount Flint EMC would
pay per kilowatt of electric
power. It is hard for us to
see any justification for this
massive increase, which will
cost one group of users be
tween 10 and 15 million dol
lars more annually, when the
Southern Company’s earnings
per share have been reported
as increasing more than 12%
for last year over the previous
year, and dividends to stock
holders have been increased
each year for the past 12 or
more years.” Adding, he said
that the average cost to pro
duce and deliver a KWH of
electricity has decreased as
much as 65% in the past 30
years, due to greater usage
and modern technology.
Spokesmen for some of the
41 member-owned electric
systems in Georgia have voic
ed the opinion that the pro
posed rate increase is a step
in the direction of “putting
the co-ops out of business”,
thus eliminating the “compe
tition by example”, or yard
stick influence of the service
at-cost method of operation
in the electric utility field,
according to Mr. McDaniel.
Citing a more typical ex
ample of the average cost to
individual Flint members if
the proposed increase in
electric rates is granted by
the Federal Power Commiss
ion and passed on in monthly
bills, the increase will run
two to three dollars per month,
the Flint president stated.
“We do want to make it clear
that electric rates for Flint
EMC members are not set by
the newspapers, but it is true
that any rate increase granted
by the governing federal
agency will come out of our
members’ pockets. We will
vigorously oppose this pro
posed increase.”
The rate hike will also
affect the municipal, or city
owned systems, and the state
wide association of electric
cooperatives, GEMC, and the
Georgia Municipal Association
are scheduling meetings to
plan opposition to the propos
al, it was reported. Direct
customers of the Georgia
Power Company would not be
affected by the increase.
Miss Annette Williams, a
former graduate of Houston
High School, and presently a
graduating senior at Fort
Valley State College was
awarded a plaque during Busi
ness Week at the Fort Valley
State College, for having
achieved the highest average
in the department of business.
Miss Williams was also
honored at the Annual Honors
Convocation.
