PThe Cook’s Nook

This week'we bring you “budget”
ideas. Two recipes are meat dishes
using round steak, the other a chicken
recipe. Your Cook’s Nook Editor is
replying to a request for “meat and
tators’’, something “cheap and
quick”. With the cost of living going
up almost daily it seems that most of
us are looking for something tasty,
economical and easy for our family.
Cheesy Round steak is an easy one,
cooks in the oven while you are busy
with other things. The 1-2-3 Stew is an
easy-do dish but takes longer to cook.
The Chicken Paprika is a grand dish
for family or company dinners. So
“cooks away.”
CHEESY ROUND STEAK
IV2 pound round steak, thick
1 beaten egg
1 3 cup grated Parmesan cheese
1 3 cup fine bread crumbs
1 medium onion, minced
1 3 cup salad oil
1 (6 ounce) can tomato paste
2 cups hot water
V 2 teaspoon pepper
1 teaspoon sugar
V 2 teaspoon oregano
Pound flour into steak. Trim off fat
and cut into pieces. Dip meat in
beaten egg. Roll meat in cheese and
bread crumbs. Brown in oil. Put
browned meat in shallow baking dish.
Put onions in pan meat was browned
in and saute. Combine tomato paste,
hot water, and spices. Boil mixture

for 5 minutes. Pour most of sauce
over meat, add Vfe cheese and rest of
sauce. Bake at 350 degrees for 1 hour.
1-2-3- STEW
1 can cream of mushroom soup
1 package Lipton’s onion soup
2 or 3 pounds round steak, cubed
Brown meat in a small amount of
bacon drippings or salad oil. Place
meat in casserole. Mix two soups
together and add to meat. No water,
please! Cover. Place in 300 degree
oven for 3 hours. Serve over rice with
French bread and a salad for a
superb supper. Easy too. Serves 6.
CHICKEN PAPRIKA
1 chicken, cut for frying
1 onion, finely chopped
1 tablespoon paprika
IV2 tablespoon flour
2 tablespoons salad oil
1 teaspoon salt
2 cups water
1 cup sour cream.
Brown chicken, salted and pep
pered to taste, in oil in heavy pot.
Remove chicken to saute onion. Place
chicken back in pot, add remaining
ingredients, except sour cream and
simmer about 1 hour. The flour blends
better if mixed with the water before
adding to the chicken mixture. While
mixture is simmering, it should be
covered with lid tight. Remove lid
after simmering and add sour cream
and allow to cook slowly about 5
minutes more. Serve over cooked
rice. Serves 4.

Spring Carnival Starts Today
Its Spring Carnival time
again. The Carnival is
divided into three parts this
year. Thursday will be the
Class Competition between
the Bth and 9th grade classes.
The games will be held at
Houston Gym at 4:00.
Friday will be Bingo Nite.
30-35 games will be played
for such prizes as a wrist
watch, hairdryer, 8,000
trading stamps, many $5.00
gift certificates, hand drill,
Zebco rod and reel, a
basketball, and many other
fine prizes. It will cost only
$2.00 a card to play all the
games or you can play each
game for 25 cents. The
games will be played at the

Martha Deadwyler Receives Award From David Perdue
Perry Teacher Receives
Special Education Award
Mrs. Martha Deadwyler,
Houston County Teacher,
was chosen Georgia’s
Special Education Teacher
of the Year by the Council for
Exceptional Children. Mrs.
Deadwyler is shown with
David A. Perdue,
Superintendent of Houston
County Schools, after ac
cepting her award from Dr.
Art Alper, President of the
Georgia Federation of CEC.
Ceremonies honoring Mrs.
Deadwyler were held at the
Marriott Motel in Atlanta
during the recent meeting of
the Georgia Association of
Educators.
Mrs. Deadwyler has been
a teacher in Georgia for 29
years, 17 of which have been
in Houston County. She has
been a teacher of exceptional
children for the past 9 years
and is presently assigned to
the Perry Grammar School
Annex. She earned her
Cachelor’s Degree in
Elementary Education at
the Woman’s College in
Milledgeville, and her
Master's Degree in Special
Education at the University
of Georgia.
Commented Perdue,
“Mrs. Deadwyler has been
an outstanding teacher of all
children, and helped to
pioneer our program for
exceptional children. We are
indeed fortunate to have her
in our school system. She is
most deserving of the award
as Georgia Special
Education Teacher of the
Year.”
