Breast of Chicken Jeannette, as Prepared at the Atlanta Biltmore

hot weather (lish, which is nutritious
but not unduly heating, furnished by

showing how it is prepared in that
famous hostelry:
Cre silver vegetable dish for mold,
if available: otherwise, any oblong
side dish of proper,depth will serve.
Pn pare aspic by your favorite recipe.
Pour into mold about li> inch, and
-when slightly hardened, place upon
it slice of roasted chicken breast about
14 Inch thick, nicely trimmed. Mold
goose liver sausage over the'chicken in
shape shown in illustration. When
bottom layer of aspic, is solid, re
move carefully from mold and place
on platter. Pour over the molded

J. J. Stephenson; east, by J. J.
Stephenson; south, by Joel A. Owens.

goose liver several layers of sauce
chaux froid. Make this like cream
sauce, except use chicken broth In
stead of milk, add a bit of cream and
enough gelatine to thicken. While
still liquid pour over the molded goose
liver and chicken breast. Decorate
top with truffles as shown in illustra
tion; pimentoes, olives thinly sliced or
mushrooms can be used instead of
truffles. Then pour over the whole
several layers of aspic and allow to
stand in platter until aspic hardens.
Trim around edges with knife and
carefully remove from platter. Serve
with Salad Princess —asparagus tips,
bound together with ring of pimento
with Princess dressing. French or
Viniagrette dressing may be used in
place of Princess.
