Cooking Is A Relaxing Hobby
For Businessman Skip Dawkins

Cook of the Week is Gillis R.
(Skip) Dawkins, Manager of the
Alltel (formerly GTE) Office, lo
cated along Hwy 41 South in
Perry.
A native of Greenville, Alabama,
Dawkins graduated from Greenville
High School, from Lurleen Wallace
Jr. College at Andalusia, Ala., and
from Troy University in Troy,
Ala., where his major (at that time)
was music. In addition to being a
good businessman and a good cook,
Skip is an accomplished musician,
admitting to being able to play nine
instruments.
He met Betty Girling, a native of
Tucson, Arizona, at Troy State
University, where she was majoring
in music. They were married and
now have four daughters: Mary, in
Charleston, W. Va; Jennifer, in
Warner Robins; Beverly, a student
at Macon College, living at home;
and Cynthia (Cindy), a senior at
Perry High School, also living at
home.
Dawkins said that he learned to
cook shortly after marriage. His
wife had a job that lasted longer in
the day than did his job, so they
agreed that he would cook and she
would clean up the kitchen.
As a kid, he had worked in the
kitchen and watched his mom cook.
She cooked three meals per day
from scratch, first on a kerosene
stove, then a gas stove, and finally
on an electric stove.
Daughter Mary is a good cook,
sharing recipes with her mother and
together watching cooking pro
grams. They then try the recipes
and feed the food to the kids to see
if they think it is good.
The other daughters have not yet
reached the expertise Mary has
reached in cooking, Jennifer is get
ting pretty good - she is an experi
menter, he says. Beverly and Cindy
are working on it. It is to the point
"either learn or starve to death!", he
laughingly said.
He reminisced about his mother's
fried chicken, homemade sausage
and souse meat in which she used
Legg’s Old Plantation Seasoning
and red pepper, if she wanted it to
be a bit spicier.
Dawkins says that cooking is a
good pastime - "a hobby, especially
for businessmen. It is relaxing. In
addition, it ensures that your family
can eat healthful foods and also
have fewer medical bills from the
effects of snacking all the time.
You learn short cuts, so that if
members of the family have ap
pointments within 30-40 minutes,
you can prepare a really good meal
within a few minutes and have
them on their way without too
much rushing."
Not only is Dawkins busy with
Alltel, his wife still teaches music,
he still cooks and sings in the Perry
United Methodist Church Adult
Choir. He is also a member of the
Perry Area Chamber of Commerce
Recycling Update
Can we return to the good old
days? Years ago Americans
recycled all sorts of things, from
newspapers to string to tin foil. It
was the right thing to do for the
nation's good during war time. We
used to be a very conserving
people. We would use it up, wear
it out, make it do, repair it, and
pass it on to others.
Now we're more apt to toss it
out and buy a new one. We are
more likely to use a one-time
product than one that can be reused.
Just think, we use 18 billion or 5
million tons of disposable diapers,
1.6 billion disposable pens, 200
million tires, and 2 billion
disposable razors every year. Every
American throws out an average of
1280 pounds of waste each year.
With just a little concern and an
attitude adjustment we can make a
big difference. Use high mileage
tires with correct pressure, use
concentrates and add your own
water, use cloth towels and napkins
and regular plates instead of paper,
keep a ceramic coffee cup handy,
don't buy individually.packaged
items such as cheese, juices,
desserts, puddings, chips, etc. Use
long shelf life items in bulk and
remember the 4Rs. Reduce, reuse,
recycle, and reject.

Hotel every Monday at 12 o’clock
noon for lunch, a program and a
business meeting.
After discussing old and new
methods of cooking, Skip presented
the following recipes for your en
joyment:
Cajun Collards
2 pounds of collards and mustard
greens
1 cup of onions
2 cups of white wine or cooking
wine, or apple cider vinegar
2 Tbs of salt
2 Tbs of hot sauce
Combine ingredients in large pot.
Set stove at medium heat and cook
until tender.
Men's Club Biscuits
5 cups self-rising flour
1/4 cup sugar
1 cup shortening
1 tsp baking soda
3 packages of yeast
2 cups buttermilk
Dissolve yeast in 1/4 cup of water
before adding to mixture. Combine
all ingredients and mix thoroughly.
Let dough rise slightly before
using. Roll out the desired amount
of dough and cut biscuits.
Place remaining dough in
refrigerator. Cook biscuits at 450
degrees F. until brown on top.

1 cup of self-rising flour
1 cup of sugar
1 cup of sweet milk
1 stick of butter (melted)
1/2 tsp cinnamon
1 tsp vanilla extract
Defrost peaches well before adding
to combined ingredients. Mix all
of the ingredients before adding the
peaches. Bake in oven at 350
degrees F. until brown on top.
Ma Moo's Pecan Pie
1 cup white karo syrup
1 cup sugar
4 eggs
1 Tbs plain flour
1 tsp vanilla extract
1 cup of pecans, chopped or whole
Mix all ingredients together,
adding pecans last. Ingredients will
fill two 9-inch pie pans or 1 deep
dish 9-inch pan. Bake at 350
degrees F. for about 45 minutes.
Cindy's Favorite
Potato Casserole
2-pound bag of frozen hash brown
potatoes
1/2 cup melted margarine
1 1/2 tsp salt
1/3 tsp pepper
1 can cream of chicken soup
1/2 cup finely chopped onion
1 9-ounce carton sour cream
10 ounces grated cheese (sharp)
Mix all ingredients and put in
9x 13-inch baking dish. Sprinkle
top with parmesan cheese, then top
with 2 cups crushed crackers and
1/2 cup melted margarine. Bake 1
hour at 150 degrees F.
